For pvp; if in doubt, use thermal (apart from minnie T2).

Most of their ships are pretty vulnerable to doomsday devices. Tip of the day: megathron is vulnerable to motherships.

Minmtar nano ships hit like wet noodles. Ishtar is fairly slow for a nanoship. They of course have their weaknesses.

QFE. Thermal may not be optimal often, but nothing has very high resists towards it.
Unfortunately only missiles (which suck vs fast ships) allow you to choose a damage type. In PVP, you are probably better off just loading the highest raw damage ammo for your weapon or race, such as:
Caldari: Missiles, generally kinetic (lots of ships have high kinetic damage bonuses), Rails, antimatter
Gallente: Rails, antimatter
Amarr: Lasers, multifrequency
Minmatar: Projectiles, EMP

In general, it goes something like this:
For T1 ships, thermal and kinetic resists are usually around 30 on both shields and armor. Shields will have about 50 exp and 0 em resist, armor is the opposite.
For T2 ships the resists will be those of T1 ships plus additional resists tunes to their racial nemesis. So for example, matari will get em and thermal as those are the damage types of amarr. Gallente would get kinetic and thermal as those are the caldari damage types.
The extent of the bonus racial resists are roughly proportional to how combat oriented the ship is, so a HAC will get lots and a cov ops little or none.

Probably a safe bet that most Gallente ships are tanked for therm, kin, exp. EM is probably the weakest resist on a PVP setup.

This used to be true. It isn't anymore.
Against most player shield tanks, use kinetic. This includes T2 minmatar.
Against armor tanks, use EM. It's actually the lowest resist now on your typical player built omnitank.
