Fly what you want to, it really doesn't matter. Put enough time into the game and you'll be able to fly ships from every race. Put way too much time into the game and you can fly every ship from every race.
Just pick the one you most like the look of. Both Minmatar and Gallente have their advantages and disadvantages, as well as their synergies with Caldari in terms of skill training.

Cross-training is usually easier than training the first race, because most of the support skills are already there. Personally, I prefer to train mostly support first after getting into one class/race of ships, then all racial T1 weapons, all T1 ships, then start going for nearly maxed support, finally T2 ships of one race, some T2 weapons for that, then finally all T2 ships and later on all T2 weapons (or depending on race, T2 weapons first, T2 ships later).
Suggestion : anything goes. It's just a matter of personal preference. All races end up (eventually) buffed or nerfed, and right now there's a decent balance going on.
I'd rather train for a specific ship than for a specific race... and then another specific ship, even if it's a whole different race and/or class. Personally I'd rather be 100% nerf-proof by simply having them all

Mostly it depends on what you want to do with the second race. What I gather from reading up is that gallente have the better battleships of the two and minmatar have the better (or at least currently more useful) T2 ships (hac, recon, command ship).
Gallente seem to be more optimal for PvE than minmatar but you probably have that well covered with caldari -- unless you're just bored.
No matter what you do you should take a few days to do minmatar frigate and small projectile just because the Rifter is a ton of fun.
But yeah: your answer there largely depends on what you're looking to get out of the deal.

train all of the races, no seriously look at you skills see which race wouldnt take too much extra skills and go for that.

Personally, I fly all races up to BS and every t2 frig and dessy, T2 cal and gal cruisers, etc.
I have found that each race has it's strengths and weaknesses As a "noob" I found it quite easy to fit up cal/gal ships as your weaponary is the same (Hybrids for example - dmg bonuses on gal/range bonus to cal), and you only really need to bring your armor tanking skills up to par. I currently fly Amarr/Minnie ships for their speed, but then I am a very specialized pilot (0.0 and booster smuggler), choosing speed and stealth over weapons. Actually it's pretty rare for me to even fit weapons to my ship...
Just my 2 cents...

To hell with that, try quad race piloting.
My favorites are: Curse (Amarr recon) Vagabond (Minmatar HAC) Dominix (Gallente battleship)
And what am I training for? Chimera (Caldari carrier)
Ignore the race of your character. It doesn't matter. Train for the ships you want to fly. - Support fixing the UI|Suggest Jita fixes|Compact logs |

i do all ships but really only focused on support skills for caldari and gallente. its a decent choice, but be prepared to pay a lot for clones in the end. they start getting expensive after 40-50m.

Am I the only one who flies their native race's ships only? I'm a Gallente purist. Maybe one day, when I can't train any more skills to improve my Gallente ship handling, I'll train another race, but until then, I'd rather specialize.
Part of this is role-playing reasons, part of it is the fact that if I specialize, I'll be better at Gallente ships than I would be if I trained two or more race's ships.

There is nothing WRONG with doing this, it can just be a bit dull :) Variety is the spice of life or something. ----- http://evenewb.blogspot.com/

Some people like to specialize and some dont. I think its a good idea to specialize early in the game so you become efficient as fast as possible, but if you have a couple of years of Eve skill training under your belt, I think its no harm in training some other race ships as well. In fact, I think it helps you understand the enemy. And its fun to fly new ships!
Currently training Gallente Cruiser V. Ishtar/Deimos are too sexy to pass up. :)

And there i was thinking the topic was about flying in two difference races at the same time :(

Go Gallente. Caldari and Gallente both share hybrid weaponry bonuses on their ships so that makes things easyer for you. -------------------------------- To borrow a phrase:
