If you can't see the benefit of running a corp's transactions through SAP then you don't really understand how SAP works or what it can do. It would be stand alone as, obviously, you can't implement 3rd party software on the EVE cluster.
Much like RL businesses, if your company is a shambles you'll never get it to work. This would be more for the well organised/ disciplined corps in EVE like BoB or RA.
It depends entirely on how seriously you play the game but some player might find it a welcome respite from mining, for example, and some of the roles in EVE like 'accountant' might actually mean something when that person is responsible for reconciling the corp's finances and reporting on them.

So instead of just commentary, let me try to answer some of your questions.
If someone can explain what data can be obtained from the EVE server I'd be grateful. ---Take a look here..http://myeve.eve-online.com/api/doc/.. This has a ton of data that you can pull down including transactional data that you could use for the forecasting.
Has anyone seen anything similar to this on this forum as I'd be interested in ideas/ common issues etc. --Not seen it done with a huge ERP like that. Similar to what others have mentioned it is just overkill. (Interesting, but overkill)
Any pointers would be much appreciated. --Sure, unless you have a serious enjoyment of doing SAP work, get free access to the program, AND have more people to help you. I would stick to the excel sheets.
SAP is SO unnecessary for this game it is rediculous. Many people have developed Excel sheets that do exactly what you are asking (as you noted.) And that is including the planning and forcasting aspect of it. Granted, SAP can so a lot more, most significantly in the forecasting part of it. So, if you were to grab some of the EVE data via the API, then concentrate on that. You could probably make a killing if you can start to develop a quick reacting forecasting model based on areas. But full corporation management is way too much. Helpnuout
