This thought just hit me, what music can we expect to be available in bars? I assume there will be some kind of jukebox, with different tunes to suit each race? I also wonder about the music preference of each race, I think I read somewhere about gallente and techno :D

sansha - goth, shoegaze, post-punk... the works angel - uh, I'd actually throw some post-rock, explosions in the sky etc. or sludge, something complex with guitars, but not annoying [not math rock] guristas - metalcore, post-hardcore? think As I Lay Dying serpentis - whatever you listen to when you take ecstasy. blood raiders - industrial, think KMFDM
for the main races amarr - dark ambient/chants minmatar - yeah, metal really goes there, but which one? I'd say melodic death metal or maybe stoner rock gallente - techno and other forms of electronic 'rave' music, you know electronic music for the masses. caldari - tough nut, but pop isn't it. they're more of an IDM race. Think Boards of Canada, Aphex Twin etc.

Amarr - I want to hear hymms and Gregorian chants! Minmatar - I concur with the suggestion of melodic death metal Gallente - Eurodance. It is the most annoying yet addictive thing I could think of. Caldari - Red Army Choir

Minmatar: Tribal techno, deep drums and fast beats. Think Matrix Reloaded, Morpheus speech. In their nicer bars? Well, you can't hear much over the sound of the poorly working machines.
Caldari: Definitely industrial. Maybe in their 'nicer' establishments, a contrasted melodious asian.
Gallente: Punk in the rough places, with Enya in the nice ones.
Amarr: I can only think of Gregorian, and as someone who spends a lot of time in station, I'm really tired of the humming and chior boys singing in the background. Maybe the commoners listen to something less sophisticated. God I hope so.

Oh please, anything but FRENCH RAP! Spare us.. And the serpentis choise of music would be classical of course, would fit that universe's biggest drug cartel theme.

Amarr: goth trance, similar to THIS maybe, but with less German.
Minmatar: tribal techno, durr. Take Afro Celt Sound System and remix them with a heavier bassline and slightly stronger beat (so you can actually dance to it), and you wouldn't be far off. or better yet, "Zion" by Fluke.
Gallente: Kidney Thieves, I reckon. That sort of field, anyway. Glorious girl-vocals over something moodily electronic. Perfect for hanging out in the turquoise lighting looking fabulous in a body-condom.
Caldari: I'm not entirely sure. I spent an hour searching and the closest I came to my particular mental image of the Caldari would be remixed Nine Inch Nails, and even that's a ways off. The closest one I found would probably be the remix of "My Violent Heart" -

Thinking about club/bar music:
Gallente - Electronica/dance/trance for clubs, but being a liberal society I think anything would fit Minmatar - Probably anything on the rockometer from rock through to heavy UberDeath metal[TM] Amarr - Techno-orchestra/choir, one particularly famous example springs to mind from The Fifth Element Caldari - Synthpop, sounds corporate without being as free as dance/trance of the gallente. Eighties music may also suit them, since it's often played in corporate environments now due to cheap licences and reminders of better times gone by.

Minmatar - Some tribal techno, maybe bit of punk / rock and eventually some reggae or ragga jungle, asian dub or dubstep is good too
Caldari - Pop, Rnb
Gallente - Hip Hop, Trip Hop, Electro, Downtempo
Amarr - No idea, freaking religionistic weirdos
Serpentis - Ghetto hiphop for crack dealing
Guristas - some metal
Angels - Some weird electro/minimalistic ambient and experimental, some really odd music

Caldari are way too cold and too warcrazed to listen to pop music and RnB though :P
I think most music in EVE will be a bit darker and more electronic, for some reason I imagine minmatar as DnB fans :D They gotta have something like the starwars cantina music tho ^^
