This thread is lacking in Summoning. Fear not, for I am here to rectify the error of your ways! It's not exactly symphonic metal, it's more in the realms of "what the **** is it, anyway?" - "experimental atmospheric black metal", they call it, apparently, although by now it has not much but the vocal style in common with run of the mill black metal. I figured it would fit here anyway. 
But what it is, is abso-****ing-lutely epic. And when I say this, I mean goosebumps-quality epic.

Summoning is probably the greatest band around at the moment. But they are not Symphonic metal, Atmospheric black metal is probably the best descibtion I can come up with for them.
I'm shocked no one has Mentioned Therion, they started the Symphonic metal genre and still the best band in it imo...

@OP if you like some of that stuff you might also enjoy the Darkwave/Electronica side of that Genre. The Gathering, Flowing Tears, Guano Apes, Kidneythieves, Tapping the Vein, Rasputina, Snake River Conspiracy, Collide and certain tracks by Curve spring to mind, although there's plenty out there.
I started out liking those exact bands also, back when Evanescence were still cool, Tarja were still in Nightwish and nobody had even heard of Lacuna Coil - but tastes progress over time and you may find yourself doing a 180 and liking a genre you despied previously. At least that's why I listen mostly to Progressive Trance/House these days

Hmm..
Stratovarious - Not really symphonic, but they have a similar sound. Blind Guardian - All their stuff since Nightfall in Middle Earth. Their older albums are thrash but still good thrash. Therion - Hit or miss (mostly miss these days ). Theli and Secret of the Runes kick ass though. Might offend some people (not Satanic, but definitely strong pagan themes) Nox Arcana, Midnight Syndicate - Not metal (more atmospheric) but they have a good symphonic sound Kamelot, Nightwish, Symphony X, Rhapsody of Fire, Freedom Call - already mentioned but I'll plug 'em again. Also check out Luca Turilli's solo albums.
Summoning.. hmm.. haven't heard of 'em, have to check them out. ---

Therion and Nightwish the rest rip off each other endlessly.
The secret of the Runes is just amazing and well Once by Nightwish is an Eve classic thanks to The Mercenary Coalition.

If everyone would just install linkification already ...  Linkage zomg!
And yeah, female vocalists are often annoying.. but then so are overly whiny male ones, which are really far too common. I find female vocalists especially annoying when used in a hiphop hook/chorus while everything else is done by male voices. Instant fail.
Also, curse you people for mentioning Kamelot, now I'll have to listen to Forever for 30min+ on repeat again
