So I traditionally ran missions for Amarr, but then FW came out and my corp joined with the Gallente folks which means my Amarr agents are pretty much off-limits.
I've just recently gotten the Gallente standings up (or nearly up) to the point where I can do lvl4 missions for the Gallente, which are primarily against Serpentis.
Here's the problem - I don't know what ship I should use!
I can fly: Amarr BS w/ t2 guns and anything smaller Minmatar BS with t1 guns, anything smaller with t2 guns (no CS though) Drake with t2 launchers
I also have: Cruise Missiles lvl1 Torpedos lvl0
My gallente skills basically stop at medium hybrid III, gallente cruiser III, though I have good drone skills (t2 small and meds, interfacing V).
Will bringing an Amarr BS into such a mission be an exercise in frustration, is it the best option, is there some major ship class that I'm missing / should train for...

Whenever the words 'best' and 'PVE' are together in a question the answer is usually 'Navy Raven' and 'missile bukkake.'
Drake with HAM IIs is doable in level 4s, but frustrating on account of some rats keeping long range. Cruise CNR is easy mode for Guristas, Serpentis, Angels and mercs.

Hmm. Unfortunately then I'd have to train cruise missiles up to 4 or something, and then caldari cruiser IV, and then caldari BS...
Besides, ravens are ugly.

Problem with lazors and Gallente missions is that Serpentis are most vulnerable to Kin/Therm and Angels, which you'll also see plenty of, mostly don't like Exp/Kin. Beams of light don't do much of that damage. If you could back that up with T2 missiles and T2 drones of the right kind I guess that could help a bit, but the best would be an all missile or drone ship.

Of the options you listed Drake might be your best bet just because Serps are weak vs kinetic. But don't even think about using HAMs. You will be damped. Drake targeting range sucks. So you will want to use FoFs because of a 8km targeting range (train them up to 4). Also use kinetic drones.
But, yeah. These forums seriously need some indicator that the post has ended and the sig has started.

Lasers work pretty well against serps, thatnks to the high dps. It's Angels and Gurista they suck at.
I have this vague memory of getting Serps, Angels and Blood, with the odd Sansha and Drone encounter thrown in, when working for Gallente in Gallente space.
So in your case I'd say use some suitable minnie BS for Angels, Lasers against everything else, and hope you don't get any Gurista at all. Minnie is the only race I don't fly at BS level on any character, so can't advise you about which one to use.

Was playing in EFT, figured out that I can - right now - put together an Apoc that throws out 900+ dps out to 30km and is reasonably cap-stable, which should be at least roughly equivalent to, oh, the damage that I'm likely to get out of a crappily-skilled raven/mega or well/skilled drake against serps.
So the real question here is do I use that, or go for a 8x 1400mm artillery, phased-plasma wielding Maelstrom? (560-ish dps, 30km optimal, 36km falloff, approximately).
Anybody with good experience with maelstroms v. serpentis? Thanks for the replies so far __________________________________

Apoc should cut it, or if you want more dps go with Abaddon. Personally I'd hit up a Nightmare, used the Nightmare more than a few times on Serp missions and does just fine, considering an Abaddon can output nearly the same dps I'd of thought it fine for use. Especially as it negates you having to train another skill tree while also saving on ammo costs.

I find that a pulse Armageddon with excellent gunnery skills tears up Serpentis. ------------

Kronos or Nightmare. Kronos has better damage types for Serps, but Nightmare outdps's it, so they should work out to about even. Paladin would prolly be pretty good too if you can fly it OP, but Nightmare is better.

As I said, my gallente skills are basically poo. Can't fly marauders, not shelling out 1bil for a nightmare
looks like I'm going to be giving it a go in the good old apocalypse __________________________________

Considering the ships you listed - go with amarr bs vs serps - they are quite weak to thermal damage.
When you get the guristas / mordus / angel missions you'd better stick with the minmatar bs, 1200s with semi long range should work well - adjust tank, ammo to match particular faction. I suggest 1200s over 1400s for missions - range/dps not so greatly different while the 1200s have larger mag capacity and you wont spend as much time reloading.
If you plan on doing missions there long term - either get your gallante ships and drone skills up or work on missile skills and get into a raven. It will pay off in the long run (faster missioning, faster isk/lp). Proper drake can tank any lv4 with ease, but the dps is lacking so missions will take awhile.
