In the description of the game it says at some point: "..incredible dogfights.." etc.So i started the game dreaming to become a legendary "One Eye Jack" capable of dodging missiles and things like that.Unfortunately the reallity is that even thou i can get the capabilities in terms of speed and agility the limited controls wont allow me to do nothing of the sort

Well, when they said "incredible dogfights" they meant it more in a naval sense, rather than a ircraft/anime sense :)
1v1 in interceptors can cone close tot hat ideal - about two blocks away, to be exact. EvE is predicated on naval terminology, flight patterns (closes description I've ever seen to how EvE works is "submarines in space"), and tactical considerations.
There are games coming out that are a bit closer to that anime madcap feel - one of them may suit you of EvE doesn't. Space MMOs though are VERY few and and far between - you may wind up settling for a WWII Online flight sim.
If that's the case and youy leave EvE, please feel free to send me all your ISK - don't want the stuff, just the ISK - as a token of appreciation for giving you a non-wisecrack answer :)
(ps - I don't really expect it :))

One of the healthier midsets I've seen all day. If you can manage to keep a few extra ISKies in your pocket, you'll end up with more fun than you can handle. Better yet, team up with a few friends as well as someone who can teach a few player skills, and you'll have fun seperating others from their expensive little toys.
You'll find that PvP gets rather expensive (for whoever is on the losing end, usually) but PvE and Market PvP can be most profitable. Find a balance that works for you, and have at it. _______________________________

Naw - as I said - didn't expect any :)
Sounds to me like one of the best things you can do is get into a player corp, and get your PvP feet wet. Many plauer corps will help out new people wiht promise, providing them wiht ships etc while they learn the ropes.
To learn PvP, you might try Agony Unleashed's PvP classes - they're pretty good at teaching the fundamentals. EvE University as well, though they're not as PvP focused as Agony is.
You at least have the right mindset - wait for it, it gets better as you go.
Either way, wish you luck!

You, sir, have the perfect mindset for a newcomer to this game. Your own personal idea of fun matters the most when playing a sandbox-like MMO like EVE, and its a very refreshing breath of wind when I read a post like this.
Basic advice in terms of ships, fittings, and combat:
Stick to small ships (frigates). Fit them for speed and warp disruption and stasis webifying(tackling). If you cant fit both the warp disruptor and the web, drop the web. No point in fighting someone else if he gets away.
Since speed is the main point of small ships, its best you stay outside web range (10-13km) and keep them scrambled till you or your buddies are able to put the damage on the target till it pops.
Since small ships have faster lock times, you'd probably got a shot at popping the enemy's pod as well (for the extra ego boost :D ).
Everyone loves a good, fast tackler. The faster the target's locked down, the better the chance of getting him to pop and eventually since you're the faster/closer ship to the leftover wreck, get to the loot sooner.
Once you've got some SP under your belt, you may notice the T2 versions of frigates, the interceptors. This is a whole new ballgame, and where "dogfighting" in EVE mostly takes place. Rare, but totally exhilarating to participate in. Heck, I get excited watching interceptors dogfight it out.
Good luck, and enjoy the fast, white-nuckle life of a tackler -

EVE is not a twitch game.
EVE will never become a twitch game.
That's how simple it is.
