and what can they not hold? I have been reading up on them and from what I have gathered they cant hold ore is that correct? Can they hold anything but ore? Is there a list somewhere?

They can hold anything that fits in their cargohold. Much like all other cargoholds and ships.
They cannot scoop cans from space, that is their only limitation. Parrots, commence!

ah so they can carry resources they just cant scoop from space. Thats alot better then.

Freighters are the only ships that can carry the largest objects in EVE, for example, player built Station 'eggs', each weighing in at 750,000m3. They can carry any objects in EVE except the huge capitals. If its a ship it has to be packaged.

Frieghters can get up to 981,250m3 if you have Caldari Freighters V.
Thats:
4 Hulks and some change
5 Drakes + Change
3 badger Mark II's + Change

Volume of an orca: 10,250,000.0 m3 (500,000.0 m3 packaged)
Freighters can carry capitals too, if only just the orca. 
Edit: Also, freighters can scoop stuff from space, but only if it's another freighter wreck. ____________________

Freighters cant carry assembled cans exept freight ones.

Actually if the ship can fit in a courier contract unpacked, you can stick the courier package in a freighter.  -------------------- Originally by: Crumplecorn

How about we stop discussing and caring about wether ships can wear the capital tag or not, since it really doesn't matter and just ignore pseudocapitals that can go into highsec and just leave it to the combat ones and rorqual. Parrots, commence!

750,000m3 isn't a weight. It's volume. Subtle difference, but an important one.

Sub-capitals can be built straight from materials, capitals require the intermediary of capital construction parts.

The term "weighing in at" can be used in conjunction with virtually any form of measurements these days.
Just watch some dragster/hotroad/whatever show where they talk about X car's engine "weighing in at" Y horsepower.
Yes, traditionally, it's used for weight, but then against most traditionally it's used for human weight when entering a (pseudo)-fight in wrestling, professional martial arts, boxing, etc.
