My alt would be an Armageddon Imperial Issue or a Fedathron ('cos I love mega's  )

Rifter, they are just super fun to fly. You can also set them up for nearly whatever you'd like to play with, armor tanking, shield tanking, mission running, piracy, you could mine in it I suppose..., whatever.

Arbitrator. You can fit it out do to just about anything. With that little sucker I can, efficiently, mine the ore I need to make more Arbitrators and I can rat for parts. For a cruiser it's a particularly nasty bit of work with the right skills. I can't see ever getting bored experimenting with different loadouts for her 4 high, 4 mid and 4 low slots and the spacious drone bay. Not getting bored is my highest priority if I'm stuck with just one ship.
Curse and Pilgrim are far better pure combat variants but lack the mining drone bonus to make them pure all arounders.

1 - Federate Issue Mega fo sure! Full officer fit would be nice.

3- Navy Mega uber tankage
Can you see a pattern 
With the nerf it's made the mega like a caged animal. If you stay out of the cage you're safe, but venture inside and you're dead!

If the Keres could fly around claoked then it would be my first choice.
But I would go first with the Dominix.
It is a versatile ship. With drones maxed at V and bs lvl V I can really poor on the hurt and cause havok. I can do all the things others races can and do it all in a single ship.
My second one would be if eve ever put it in is the Myrmidon from Freespace 2.
Second most versatile ship I have seen.
3rd is the Arazu.
4th would be the Kronos.
