How much is it, 500 mil?

Depends on how you fly it, what you fit on it, where you fly it and who you are - and more importantly who you run into. You can get ganked for just being there, you can be safe for years running in a ship of 50b. Parrots, commence!

I was more thinking of, you're doing missions in a semi-mission hub. The gankers scan your ship, how much would you need to fit (in terms of isk value) before its viable to probe you out and then bring a few torp-ravens to melt you before concord comes? Say a tier 2 or tier 3 bs with about 400ish dps tank?

The tank needed isn't measured in dps, just buffer - and everything you can get together can get suicide ganked, if its just worth the effort.

I it really depends. :) I happen do do missions in both 0.5 and 1.0. But is the difference that big, say my fitting was worth around 500m and there is a risk some of it will get blown away?

If you fit 50bil of fittings... you will get every suicide ganker in the region there. Best to fit cheap stuff and make it not worth their time.

If the 1/2 the cost of your modules comfortably covers the cost of roughly 10-12 gank BSes you have something to worry about.

This really, as on avarage half your modules are destroyed when you go poff.
As every has said there is no true limit, but if you stay below 1.5 - 2.0bilion you should be "safe" in high-sec, then ofcourse there are always people who'd like to gank you just for the cheer fun of it. Also never autopilot if your ship is expensive, sooner or later you will run into a competent high-sec gatecamp that will ruin your day. ------------

Don't gamble, don't try to figure the odds. Just fly what you can afford to lose. Before undocking, ask yourself if you'd be ok if you lost that ship and its fittings. If the answer is no, then don't undock and fly something cheaper.
