There are 5 boxes which would need to be ticked for a Corp POS in a Alliance in 0.0 Space
YES/NO ATTACK IF STANDING LOWER THAN 0.0 (does the 0.0 need altering) YES/NO ATTACK IF SECURITY STATUS BELOW 0.0 (does this need altering) YES/NO ATTACK IF OTHER SECURITY STATUS IS DROPPING YES/NO ATTACK IF AGGRESSION YES/NO ATTACK IF AT WAR Anybody have a link that explains the setting, or fancies typing them out, Thanks in advance.

Ticked means POS will shoot at people with less than 0 standings to your corp. A typical 0.0 alliance will set this on and put in 0.1 so it will shoot neutrals.
YES/NO ATTACK IF SECURITY STATUS BELOW 0.0
Similar to the above but means it will shoot people based on their security standings.
YES/NO ATTACK IF OTHER SECURITY STATUS IS DROPPING
Never understood this one.
YES/NO ATTACK IF AGGRESSION
Pretty straight forward, means POS will shoot back if fired/aggressed upon.
YES/NO ATTACK IF AT WAR
Again straight forward, means if corp is at war POS will shoot, pretty pointless for a 0.0 POS.

Unfortunately, this is awful advice. The setting means ANY ship with aggro will be shot. For example, someone shield repping.

This will attack anyone whose sec is dropping in proximity of the POS. Only works in low-sec - but if you're NERDS, for example, and some nuetral comes and takes a few shots at your POS or at some non0wat target sitting near your POS, the POS will aggress them.
Like Aggression, however, if YOU attack a non-war target near your POS and trigger a global criminal, you will get shot. _______________ <Q> QUANT Hegemony Item Database

This is the only one you need to tick in 0.0 unless you expect your allies to be shooting your POS......
You need to make sure your corporation has set anyone (corp/alliance) who you don't wish it to shoot to a higher standing than is specified in the box.
You can tick attack if at war if you want too, but it shouldn't make a difference, in highsec, this is likely the only one you want to tick. (as the standing one is not available)

Change that to lower then 0.1 or the pos will not engage on neutrals.

So if you have a pos in high sec and you for some stupid reason set your guns to fire on anyone with a sec below -1.0 and the guns pop him will concord come and destroy your pos.

You can't set POS's in highsec to shoot anything other than war targets or targets that have shot the POS. You can't even manually force the guns to target them either.
I usually set in 0.0 attack standing less than 1.0 and then make sure who I don't want it to shoot is > 1.0 standing. This also leaves some scope for having people that you don't want to shoot, not able to hang around your POS.

Now do POS guns only go off standings that you have manually set for your corp or do they also go off of standings that show up from anyone the alliance the corp is in sets blue/red?

Corp standings only, not alliance standings.
This isn't so bad now as you can set corp > alliance standings. It used to be that you had to set corp > corp standings for every corp in the alliance/s :\
