Actually I think it's the only way to stop high sec 'griefing'. And that's coming from a 'carebear'.

Write the griefers nice letters. Seriously.
They are just expressing their desire for a little one on one love. Thing is though, they aren't relating to the world on the same wave length as you, so you are going to have to speak their language. So write things like:
"I hate you!" = which translates in griefer-speak to = "I really like you!"
Or maybe:
"You are a giant ****head" = in griefer speak means = "You have a nice complexion. Could I buy you a coffee?"
Or there's always:
"This game is full or rampant sociopaths! I hope your house gets attacked by a walrus in heat and your wireless modem is sexually abused into submission!" = which of course actually means = "You are most likely the coolest person I have ever met on the interwebs. Lets meet and make lots of babies!"
But if you can't be bothered with all the lingo translation, you could always get a bunch of your mates together in griffons and jam the "griefers". They really like that. It's like a big, spacey, sci-fi, group hug.
What could be better than expressing your admiration in T1 frigs? They are like the Hallmark cards of Eve. And quite a sensible purchase in these tough economic times.

I declare war on X, X says "oh noes I don't want to", I says "oh ok sorry then".
Whilst I agree that changes need to be made to make hisec wars about territory/resources not easy kills, those changes should be making it MUCH harder to make isk in hisec to encourage conflict over depleted isk making sources. The war mechanic works fine as it is.

Funny fact: Most corps who use wardec's as a griefing tool are rather cowardly and often retract and retreat when their target(s) stand up to them.
Our corp was recently wardec'ed by a merc corp. Though I won't name them, they did put up a big PR stink. They claimed to be the top of the top elite merc corps who are PvP hardcore. Over 100 active members with strong pilot skills. The finest in the business.
But we stood up to them, and though our win/loss ratio wasn't good, they still retracted and retreated. Why? Most of their PvP campaign was fear based. The sabre rattling, mail threats, beating of the chests, and the front they put on was all for show and intimidation. At heart they were cowards who shy away from a fight.

I can't think of a good reason to why the game shouldn't be enjoyable for those who don't wish to be targeted for PvP. Nor can I really think of any reason that justifies people being able to grief other corporations in highsec, neither from a fluff standpoint or gamewise.
At the moment however high sec is far too lucrative and as such I believe there is a need for griefing, people like the OP just need to adapt and be smart about it. What I'd rather see would be a big nerf to highsec mission and mining content and a boost to low and null-sec ores and rats. Along with this I'd also like to nerf the profit from moon mining, in order to make the net gain from 0.0 activities no greater than what it currently is.
Nerf suicide ganking further, move wars down to low and null-sec, breath life back into 0.4-0.1 systems but make those who don't want take any risk and stay in highsec suffer for it.

I hate griefers and I'd never inflict it on anyone, but its part of this wonderful game, a game that contains more metagaming than any before. Where strength isn't just limited to instanced PvP, raid running prowess, or some artificial realm mechanic, but auctually dictates the map, PvE, and your ability to even play teh game.
