Just for fun I set a course for Jita from Metroplis. The three low sec jumps look dicey to me. Is there an all high sec way from Minmatar space to Jita? And yeah I'm not really going there just wondering. Also how would I find a corp based in the Heimatar, Metropolis or Molden Heath area. I have alot of junk I don't feel like moving far.

Should be. Open your Map (F10), look for autopilot settings and check the "Safer" option. It'll add several jumps to the route, but it should be all 0.5 or higher.
As far as the three lo-sec jumps on your current route... just fly in a shuttle, or fast frigate. Don't snooze on autopilot, but just manually fly gate to gate. Unless you have a weird lag-spike, you'll be fine.
Also how would I find a corp based in the Heimatar, Metropolis or Molden Heath area.
Corp Tab >> Recruitment >> Other Adverts >> ... start filtering by Region.
Or just start looking through the forum recruitment section.

If memory serves me right, those 3 low sec jumps take you into the Rancer area, which should be avoided by any and all traffic, as there is practically 23/7 gatecamp. Often, they have smartbombing ships that will vaporize any frigate warping to one the the gates, so its wise just to stay away from Rancer at all times.
To avoid low sec, you can set your autopilot to avoid low sec systems, go to where you set it and change it to "More Secure". You may also wish to put Rancer on your avoid list while you are at it.
As for the corp, check the ingame ads, browse the in game recruiting channel. Be specific in what you want from a corp, and you'll find a good fit.

Why, I have a lot of junk. I just don't reprocess enough. I'll mine in my hulk for a few days in an empty system I like or run missions in a system 7 jumps alway depending on mood. So I'm spread out with gear and ships I've out grown or can barely fly.
Long trips in hulks aren't much fun.

Then I guess you just learned that being a bit more tidy when it comes to hangar/asset use does pay off in the end. Going through Rancer or any similar low sec is NOT an option.

Rancer is easily navigated.. I went thru yesterday in a shuttle with 4.3 bil of bpo's... silly pirates... just dont warp from 1 gate to the other... warp in at different angles

If you go through Rancer, you will get to Jita in around 15-20 jumps. If you pick the secure route, you'll get there in 30-35 jumps.
But then again, going through Rancer implicitly adds the condition "...15-20 jumps if you get there at all."
Maeve was just plain lucky :)

There's a reason Rancer and others like it are so popular with pirates - it's because it's a significant shortcut for most places people want to travel from or to.
Any obvious shortcut that also happens to be low-sec should be considered very hostile.

There IS a path from the Rens area to Jita that avoids lowsec - it's 23 jumps long, and uses .5 systems.
If I was you, go into your autopilot settings (accessed via the Map screen) and select Safer, then move the slider all the way to the right. THat will tell the autopilot to avoid anything les than 0.5 if at all possible. Some routes you have no choice, as they are basically "oases" of higher security in the middle of a lowsec patch - Solitude comes to mind for that one.
Anyway, I've flown that route from Rens to Jita a number of times in a Mammoth - never any issues. Just be aware that there's always some joker in a Rifter along that path that'll target you - he's trying to provoke you into firing on him. Just ignore him - everyone else that's used that path does :)
