I just started an alt acct and I'm going to start him off as a salvager to follow up after my main. I was wondering, what is a good ship to use as a salvager? I've heard destroyers are pretty good. What about faster cruisers?

A lot of people like the destroyers because of the 8 high slot layout they got. Personally I prefer a cruiser with 6+ highs and fitting an AB and expanded cargohold II's on it so I can fit a lot of normal loot in there as well. I don't have EFT or EVE at hand right now so I can't point you in on the exact cruiser I'd recommend (never flown gallente much). _________________________

Catalyst is pretty much the best, although I've heard some people use an Exequror, I have more success using the Catalyst, salvages fast, and it's cheap.

I use an Exequror. While it only has 4 high slots (I use 1x tractor and 3x salvagers), if has a much bigger cargo hold that lets you salvage most missions without having to jump back to station.

Battlecruisers work well also. I have used the Hurricane and a Harby for salvaging.

The answer is: it definitely depends on the situation. 
Catalyst is probably best for hisec L1-3 agent missions. With cargo rigs and expanders it can carry 800+ cargo, which is usually enough for those. With 8 high slots (3 salvage, 5 tractors) you can keep busy. An AB gives you plenty of speed. The other problem with Catalyst, though, is capacitor; there is a learning curve for technique so that cap is optimized.
[Raw speed, BTW, is not all that important. Anything with an AB will usually do. High slots usually determine how fast you salvage overall.]
For L4 missions, complexes, and some losec L3 agent missions the cargo space becomes a bigger problem. You then want a CR or BC with a lot of high slots and a bigger base cargo. With cargo rigs and expanders they save round trips. The problem is that they usally don't have 8 high slots AND large base cargo. So you are trading total salvage time vs. hauling time. (CRs and BCs will have enough cap so that ceases to be a problem; more medium slots for cap rechargers.)
For L5s, some complexes, and ratting in 0.0/WH, you need something more exotic, like a speedy salvager AND a separate hauler. However, since those will usually be team efforts anyway, there will probably be enough distributed cargo capacity. The salvager can use a jetcan that is towed to a central location and everybody helps unload it.

Depending on the types of missions you are running it varies on whether or not a destroyer is one of the better options. I use a destroyer to salvage everything then come back in my industrial because I usually end up with either 500 m3 in loot/salvage, which fits in my destroyer, or 2k+ m3 which takes up more space then most of the other recommended salvage setups I have come across (so I stuck with what I started with). It helps that destroyers take essentially no time to use. If you are consistently getting under 1500 (or it may have been 1200) you could go for one of the ships that allows you to fit multiple cargo expanders so you don't have to come back in a industrial.

I have a catalyst, and I fit it with 4 tractors, 4 salvagers, a Y-S8 Hydrocarbon Afterburner, a Beta Reactor Control, and two cargo expanders. I've never run out of cap, despite the fact that it eats through cap like mad, just having to cycle everything so much really really helps, all those little delays are great. I've gone down to 20% or so in some larger missions when I'm constantly tractoring and salvaging, but I've never heard 'the capacitor is empty.' On another note, I use this for Level 4s, and I have to make a few trips to get all the loot, but when I run out of space, I toss it all into a can, BM it, and move on to the next room (if there is one) and repeat, then I come back in an itty and get all the cans. Once through with the salvager, then once through for the itty, it has a tractor on it, so I land, soft align to the next can, tractor, scoop the loot, insta warp, and I've never been ganked.

Hi. Catalyst Salvaging Boat: High: 4x tractor beam 4x salvager Med: AB T2, cap recharger T2 Low: 3x local hull conversion expanded cargo I Rigs: 3x Salvage Tackle T1
Cargo Hold 700+ m3 No problems with capacitor, however I don't permarun AB. If you only salvage in it, it is more then enough. If you want empty every single wreck and grab cap batteries and T1 carp modules, you need to dock 2 or 3 times, in case of big L4 mission. Anyway, it is cheap and it does the job. No need to go for cruisers. Cheers.

Eris if you don't want to clean the things entirely, kronos if you do. Eris gets the speed and the salvagecount, fitting depends slightly on scenario and more on skills. The lacking rigslot is an issue, and I can see the point in a catalyst, but... 65 extra m/s, an extra low and especially the agility/warp speeds make up for it - and then some. Even if the catalyst at time would equal or surpass at salvage times from arrival to departure, the eris will win on average times from undock to redock - which is what matters. Parrots, commence!

If you're going to tag-team missions with two accounts at once the best Gallente salvage ship for you is probably the dominix, though if you only loot/salvage specific ships an ishtar might be better.
There's a couple of reasons for this. The dominix has a massive drone bay which will let you fit, as an example, 5 T2 heavy combat drones, 5 T2 heavy logistics drones, and depending on your preference anything else from 5 T2 sentries to multiple wings of T2 medium and/or light drones. Furthermore the ship's drone bonuses means that not only will your logistics drones be tougher to kill if they ever get aggro but the drones you assign to guard, or assist, your non-salvage ship will be significantly more effective than drones from a non-bonused ship would be.
These hold true for the ishtar as well and the ishtar also gets a drone range bonus which means that you can zip around evn farther from the non-salvage ship before your drones deactivate due to range issues. The higher base speed (almost 100% higher) is almost incidental, but still a potentially useful thing.
The biggest problems with both the dominix and the ishtar are the high slots, however. At 6 slots for the dominix and 5 for the ishtar you won't be able to salvage as quickly as other ships which would in turn be a double-whammy since you'd be killing NPCs faster due to the bonused drones.
I've tried salvaging during L4 missions with destroyers and it's okay so long as you don't rig them, but if you plan on rigging your salvage ship you really need to use a heavy assault ship, battlecruiser, or battleship. It's not pretty when you lose a 3x Salvage Tackle destroyer because a rat spawned at the wrong time and you couldn't warp out fast enough.
Personally, my salvage assistant preference is for the typhoon. I used to use an armageddon until I realized that the typhoon could hold more, move faster, turn better, and had 50m3 more drone space so I could fit logistics drones and combat drones, though in a heavy/medium split and not a heavy/heavy arrangement like you can do with a dominix or an ishtar. ____________________

That's because you are using 4 salvagers rather than 3 and you are sacrificing cargo capcity. The cargo won't make much difference until L4s, but it can be problem on some L3s. It is important because the cargo effects are cumulative. That 15% or 20% is substantial when you already have cargo rigs and two cargo expanders. Needing to make extra trips is a real killer.
[Having said that, I actually fit my Catalyst specifically for the mission with either a reactor control or a cargo expander in one low slot, depending on how much loot there is. When cargo space isn't an issue, I want that extra cap so I can avoid stopping or slowing down.]
Your big saving in cap is that the tractors eat 7X more power. However, the 4/4 fit tends to be inefficient because it forces you to shut down the AB more often or even stop periodically simply because you are limited to towing 4 wrecks rather than 5 at a time as you move through/between clusters of wrecks. One extra tractor makes a big difference in overall time, even if you have yo micromanage the speed.
The 3/5 fit is trickier to use but once you get used to it, it will result in significantly faster overall salvage time because you can spend more time moving without sacrificing cargo capacity.

I've always done it this way, but then I've always been going back to collect loot at salvage at the end of the mission. I'd guess the Domi as suggested above is the best way to go for tag-teaming. Lemuria Prospecting Ship Delivery Service |

As far as Gallente ships go, the Catalyst is a great salvage boat.
My preferred salvage boat at this time is a Hurricane.
5 tractors, 3 salvagers.

Destroyers are the best imo. I'm gallente, and I use a destroyer as my salvaging vessel. 4 tractor beams, and 4 salvagers. Decent speed, very low cost, add some cargo expanders, it will clean up a mission site/pvp site quick and easy.
