Maybe he didn't get to fill them up. Anyway, the Probe is one of those frigates with generous mining bonuses (20% per level). It can mine quite fast for a non-barge.

'Somehow'? Stealing from cans and wrecks gives the robbed party a 15-minute aggression counter during which the wronged one can shoot the thief with no CONCORD intervention.

Yeah. Once the robbed party shoots a thief, the thief gets his/her own aggression counter towards the other.
In short, CONCORD doesn't mess with thieves either way; it just lets the involved parties take the matters with their own hands. Just like in wardec'ing, come to think of it.

The probe had accumulated 7 jetcans. Robbing from one of these would give the probe pilot, and only the probe pilot, the right to shoot at the thief.

Not exactly. It doesn't give aggression rights only to the probe pilot but to all pilots from his corporation (assuming he's in a player corp).
If you steal from a player wreck, or container, the entire corp of the wreck owner will be able to engage you for a period of 15 minutes. http://wiki.eveonline.com/wiki/Can_Flipping
Note the fleet was formed with alt characters in the same corp.

Heck, even a regular thorax would have bbq'd them into oblivion. I'd even go so far as to say damn near any competently fit cruiser would have taken them down...with the possible exception of the logistics cruisers...they're pretty awful unless you get them together in packs :) --

1. Thoraxes rock 2. Vigillant rocks even harder 3. I wouldn't recommend micromanaging 3 ships at the same time 4. Why you mixing 250mm rails and blasters on the same setup?  5. Since he was using light ion blasters, he probably had a 1600 plate fitted with around 5-6k armour.

Yeah, the moment the vigilantly/Thorax snatched one of the probe's jetcans it began flashing red, and the moment my ambush party warped into the asteroid field that Thorax was flashing red on all of our screens, and YES I was failed fitted.
I'm ****ed and training more.

Some tips for you Karma....
Be patient, you still have to train skills just like everyone else regardless of how much of a cold blooded pvp'r you think you are already. Being able to fight is something that takes time and experience, you cant just jump into a fight with a handful of halfassed pilots in ill-fit tech1 crap and expect to win, even if you are only going after one guy. You need to train, learn how to fit your ships, and structure/command your gang. A good pvp pilot will take a couple of rifters and a shield tanked vexor (lol) and swat you like flies.

I almost bought this until I saw the Vigilant. No one would steal ore in a Vigilant. I refuse to believe this.
But on the off-hand chance that it's true...OP's fittings on the vex + trying to triple box with 3 close range ships is why you failed.

Talk to EVE-Uni or Agony unleashed about some PVP classes. Or contact Noir. (evemail Alekseyev Karrde) about PVP training.
If you're serious about learning PVP, the first thing to do is calm down. The second is to spend some time on Ships/Modules (not really very good, but better than nothing) or the Scrapheap-Challenge fitting forums. Learn how to tank and what ships are best at it- for example, don't shield-tank a Vexor (or most Gallente ships).
You'll need to train a lot of support skills. The basic ones like Mechanic and so forth. The amount of effectiveness they introduce to your setups cannot be overstated.
You'll need patience, a willingness to learn and patience.

I lost 2 more Rifters today trying to figure out my ships setup. I fought some guy who was flying an Inquisitor. We fought for like 20 minutes. My armor tank was holding up pretty good, and he was also very well protected. My flaw was not being able to get in maximum range to use my auto cannons to their full effectiveness.
Also, while I was busy repairing my armor my capacitor kept running out of juice, so this right here says that I need to train up my repair system skills, and the fact that guy was able to stay out of range was because I ditched my afterburners for another module. This tells me that I need to train my energy management and energy grid skills.
I guess I have no patience because I want to get into the war now, and the amount of training time it will take for me to get up to speed will be months.

If you're using Rifters it would be well worth it to train for t2 guns. Get Small Autocannon Specialization up to 4 (takes a coupla days) and then put THOSE on your Rifter. Use Republic Fleet EMP ammo. Use Barrage ammo (gives your autos a bit more range, might solve your range problems a little bit.)
Where you can't use t2, use best named (meta 4) modules.

Now this is good info. I just bought the Small Autocannon Specialization! All the other mentioned suggestions are pretty good. I will try this approach. What about armor tanking? How should I go about doing that just right?

with my pvp toons skills (near perfect ) this setup does 334 dps with all hammerhead drones or 299 with a mix. This is with no overheating which any dedicated pvp toon can do.
With just a low grade set of slaves, this setup has 13.2k HP. EHP is 47k. This doesn't include other things that can boost it even more.
This is a thorax setup, with a vig he would be tougher and have the option to add a medium cap booster and switch out the 800mm plate for a Medium armor rep II - fight would need to be decently long to rep more than the 800mm plate gives, this is more of a preference. Overheating helps with setup.
This setup with its small guns and light drones will murder frigates. it will take out most cruisers quickly if they have no plate and im overheating. Solo I've taken on 7+ young pilots in frigates / cruisers. I die too sometimes, but its damn fun and exhilarating to take on so many pilots and not ask for help. My main has 40m+ SP and i do not fly capital ships.
There are more effective setups to do this sort of thing with, but I'm not posting those.
dont expect instant success.

Look dude, having 3 accounts doesn't mean you have 3:1 odds going into any fight. It means that you're three times the noob. You've got no PvP experience, so you controlling three ships is just three easy targets instead of one.
You're doing it wrong. Either take a Rifter, run around solo in lowsec and learn to use your directional scanner and choose your targets wisely, or join a corp, take a Rifter, run around in lowsec with your corpmates (NOT your alts, bozo), learn to use your directional scanner and choose your targets wisely.
