The later Ace Combat series, Ace Combat 4 and 5 in particular. Full orchestras used in the making of the soundtracks.
AC4 was the first Ace Combat game I played and the music and story blew me away especially considering they were made for an arcadey flight game.

You people forgot the soundtrack from the original Homeworld especially Samual barbers Choral version of Adagio for strings

like a crack addict, i keep trying to put AC down but everytime i turn around i'm picking it back up again (currently drying my eyes into raisins trying to get S on 18+ 8492 ace mode :P)

Universe at War has a pretty awesome soundtrack.
But, to trump everything?
Monster Hunter Freedom Unite.
Id go with Lao-Shan Lung theme (if you are repelling its the part when he finally arrives at the castle gates). I think its also the main Monster Hunter theme.
O yea if ya dont have game, get it. I wasted over 1000 hours playing it ;p Still have to play it more :)

Oh I forgot one, Doom 64!
Now that's some scary and awesome soundtrack. Mostly dark ambient with strange cries and demonic mumbling, and it fits the game's atmosphere like a fist to.. Well, some hole.

A lot of the Wipeout series have really awesome ambient music.
For music I listen to on the way to work, I have the SSX 3 Soundtrack including several rare in-game ones such as the Unkle remix of QotSA, Alpinestars and Deep End (Utah Saints Remix).

What did they play at the "We are being overwhelmed!" section, when you've just fended off, or were still in the process of fending off a *major* attack, and a whole bunch of new black ships warp in on you?

OMG, I love this thread. Can't believe some of these haven't been mentioned yet but:
Double Dragon NES and a rendition of the 1st mission that is awesome M1 Jam
Also:
System Shock 1 Intro
Road Rash 2 Main Theme (I like the intro, and the Vermont and Alaska stage thems, just the intro for your pleasure)
Streets of Rage 2 intro theme (also like the final boss fight song, very epic, not linked here)
Castlevania Bloodlines- Calling from Heaven (many other good ones on this game)
ninja edit (had to add Simon's Themefrom bloodlines, gets me pumped just listening to it)
And so many more but these are some greats.

No linkage as cbf/at work...
Any music from one of the best cRPG's ever; Planescape: Torment; in particular Deinorra (Or whatever the hell the Nameless One's dead lover was called). Sad, haunting piece of music.
The Witcher soundtrack was also great, as well as being an awesome game to boot.
