I have just returned to this game and even though my small ship is very well fitted with tech2 items, I am not 100% sure how PvP works in hostile space. Does any one have any Do and DO NOT DO tips for me? ------------------------------

Dont aggro what you cant kill before the guys in the system next door can warp to you.

My own nublet tips;
Make a few safe spots in every system. When you ran off to a safe spot do 360 degree scans to check for probes to be able to run off again in time. Don't warp to gates when there is a gang looking for you in local. To avoid warp disruption bubbles, warp from gate to something with an other vector before jumping to the next gate. When jumping into a new sys, use the time you are stealthed to check out immediate surroundings and local. Stick to an area and make friends there. Always check players in local. If you're not sure if they are friendly or unfriendly; google for their killboards.

Aggressing = 1 minute of no jumping / docking. Very important.
Jumping or any session change = 30 seconds of no jumping / docking. Session change includes jumping through a gate, leaving station, changing ship (including getting blown up).
Those are probably the most important 'tips', as if you were to ask about low-sec I'd probably mention gate-guns and such. Those are important mechanics.

Don't warp straight to a gate or station if your ship gets popped as you'll have a session timer that you'll have to wait out before you can jump or dock.
