Frigate: Rifter hull and all its variations, hands down.
Cruiser: Caracal hull - it LOOKS like a missile boat, it looks like a combat ship, it just looks awesome.
BC: Hurricane, no contest.
BS: Nightmare is teh seks.
Caps - Meh, size is their sexiness, and I don't think any of 'em look that great TBH.

I'm surprised the Caracal got several votes here. That strikes me as one of the ugliest ships in the game. Oh well, these are aesthetic preferences, and people are bound to like what you can't stand.
I second the Anathema. That's a cool looking ship. I'm also fond of the Merlin hull. |

The first time I undocked with a Caracal I looked at it said "It's a duck". It looked like a duck to me and I didn't know why.
