Not sure if this has been asked and answered too (too lazy to search for it), was wondering what the best setup for mining with a Mammoth would be. Right now, I have 2 Expanded Cargoholds I, Civ Shield Booster (the crappy one we get form the tutroial) and a Miner II.

Don't mine in an industrial. Just don't. It's faster to mine in a racial mining frig, let alone a racial mining cruiser and use jet cans. Once the can reaches capacity, dock and grab the industrial, haul back, switch ships, repeat.
If you absolutely have to mine in a Mammoth, this seems optimal with my skills (and it takes nearly an hour to fill the cargo hold):

And can't be done AFK anyway. It can be done semi-AFK,though.

if you really want afk-inesss, you need a permarun/passive racial tank according to the rats native in your system. something like
[Mammoth, afk miner angels]
Miner II
Ballistic Deflection Field I
Invulnerability Field I
3x Medium F-S9 Regolith Shield Induction
Mark I Generator Refitting: Shield Power Relay
3x Mining Laser Upgrade I
should the shield extenders be too expensive, drop a few meta lvls. replacing the shield power relay with a 4. MLU is possible, but drops you tank by ~7 dps. likewise fitting cargo expanders is possible, but it will take already ~1 hour to fill the unexpanded hold. a tripple expanded hold is enough for one and a half hours.
