Background stuff first.
I'm new to PvP. I have the skills that enable me to fly a Crucifier and a Sentinel, maybe not all the skills to fly it that well yet, but I can climb into one.
I'm about to start PvPing quite soon and I'll be flying frigates. I'm fairly sure I understand the basic theory of flying a Rifter which will be one of my main choices. But I like the idea of an electronic attack ship for those times when I'm in a fleet.
So my vague plan at the moment is to start of with a Crucifier, knowing that I'm going to have a few blown up, before moving up to a Sentinel. By which time I'm hoping to have a better idea of how not to get blown up quite as much.
Before leaping into combat, I thought it'd be useful to ask for any basic advice or tactics I should be aware of. So I'd appreciate anything you can offer, and feel free to make it as basic as you want.

The only use a fleet would have from a Crucifier or Sentinel in their gang would be the TDs. And the Crucifier can only offer 2 of them (MWD + 2 TDs) if it gives up its tackling potential (which then completely ruins the point of bringing a Frigate in the first place). While it's admirable that you want to support your gang in this way, the Sentinel doesn't really compare to the usefulness of many other ships.
EAFs are just not very good ships in their current state. The Kitsune is somewhat useful due to the fact that jamming is just so stupidly overpowered (but you might as well bring a Blackbird). The Hyena has a slightly easier time tackling some things due to the web bonus, but it's still a bad ship. Same for the Keres (although it's somewhat more useful - you don't use it for the damp bonus, you use it for the ~45k point and ~15k+ scrambler).
My suggestion: Keep flying the good and cheap frigates (Rifter and whatnot - Crucifier is not a good frigate) for general tackling and slight DPS role they have in a gang. If you want to fill out the TD support role, train up for an Arbitrator instead. This will allow you to provide the gang with bonused TDs and bonused drone damage which makes for a quite useful addition to any small and low-SP gang (and giving up tackle will not be as stupid as you are in a bulky Cruiser anyway and there should be dedicated tackling frigates in the gang already). Flying an Arbitrator will also give you a bit of experience for potentially flying the Curse way down the line (which is a great gang ship and extremely useful).

The Sentinel can be a useful ship in some gangs and it can be a very nasty frig and despite having minimal DPS, it can still put a hurting on most frigs in the game as well as many cruisers & BC's. However the Crucifier is mostly useless unless you just need a cheap TD/platform.
The biggest problem with the Sentinel, is it really requires Electronic Attack Ships V along with Energy Emissions V and the various tracking disruption skills to at least IV's. Along with maxed cap sills and very good Drone & nav skills.
This is the real problem with EF's is they are meant to be a stepping stone to Recons, yet they require very high skill levels to use effectively. Meaning they really aren't going to be outstanding ships in the hands of newer players and older players are likely not going to bother with them if they can fly Recons.
I fly the Sentinel on my main from time to time and it's very capable, but likely as a newer player you would be better severed putting that training into other ships. TBH, a Arbitrator would do your gangs much more benefit than the sentential. Amarr Cruiser V will always be more valuable than EAS V so I'd suggest going the route of the Arbi myself as both ships require about the same level of skill training TBH.
If you are dead set on the Sentinel my suggestion is set it up nano fit with MWD. Mine uses something like this.
1x sm Nos II 2x sm Neut II
1 MN MWD (faction or best named) 2 x Tracking disruptor II 1 x 24km point
DCU II 2 x Nano's
2 x sm egress port max
The idea with this set up is hit turret Cruisers/BC's using range disruption scripts, while orbiting around out past 15km. If you have good EW skills you can cut a Harbi or Cane's range down to around 6/8km or so. meaning if you can kill off of their drones you can typically peck most turret BC's/Cruisers to death but it will take awhile.
The Neuts/Nos aren't extremely important in this set up as the idea is to stay well out of range and you just don't have the cap to run them very long. If you hang around 15km or so you can perma run the NOS to make sure you have no cap issues but over all you can just stay at a safe range and pulse the MWD as needed.
With a active Repped BC like a Brutix, you can get in around 15km, because with range disruption he isn't gonna have a chance in hell of hitting you as long as you stay out of scram/web range.. (don't forget t2 webs can over heat to 14km) You would then just run him out of cap boosters by pulsing 1 of your neuts from time to time and perma running the NOS but your own cap management in a fight like that is gonna be tough.
Overall the neuts on this set up are for anti frig/tacklers just to keep you safe as your only real defense is speed and range. You can solo with this set up but you will be in for some long fights as your DPS is minimal.

Crucifier is less than worthless for solo work, but as soon as you have just one wingman it becomes deadly as hell. Any gunboat you encounter is rendered completely impotent so ignore the drivel about not having a point making a frigate useless for PvP .. eWar boats are exempt from that 'rule'.
Sentinel is a Crucifier on steroids with the added neuting. My advice is to fit it for one or the other; neuts+injection or TD's .. reason being that to neut you have to be dangerously close to heated webs and if you also carry TDs then you have the tank of a noob ship (conversely, a TD fit does not require tank due to range it operates at) 
Just remember that they are eWar platforms and the second the enemy realizes you are using them as such you will be targeted.
Arbitrator's have their uses and almost mandatory when against superior numbers due to staying power, but they have god awful handling compared to just about anything they encounter so don't expect to get out alive (eWar platform and all that)

EAFs..interceptor's worst nightmare. I have seen a kb once with 3 dramiels loose to one sentinel guy.
Dramiel was fitted for cookie cutting. Yes, the dramiel pilots were competent 0.0 boys against the NPC corp sentinel boy ^^ Let me rummage on my saved files for that. Booboo Bear Pew Pew |

The Sentinel still has it's uses and it's likely the best of all the EAF's, but it just requires pretty high skill level for a frig to use it well.
However you will be better severed in the Arbi and as I say it will do gangs much more justice, due to it getting the same TD bonus as the Sen and a Drone damage bonus rather than the NOS/Neut bonus.
You can do just fine in a Arbi with Cruiser IV, energy Emissions IV and Nav skills at IV making it a much better choice for a newer player. Then later on as you get those needed skills up to V's it wouldn't hurt to train EAF V so you can play with the Sentinel as it is a fun ship.
I started this way on my Main, I spec'd him out for a Arbi right from the start as it was the most viable T1 solo ship the Amarr have.
