Join RVB then you can pew pew with people who are there specifically to fight.
Seriously that's part of what attracted me to RVB in the first place. I was a little like you describe wanting to avoid "non-consensual PVP" In RVB I found a place where everyone involved has signed up to fight. The members of the corporation the 3rd party war targets all come here too fight and blow up and lose ships.
I've since become a tad more ruthless as I see PVP as an essential part of what makes the interesting. Hell I even participated in ganking a hulk (people should be careful who they threaten you never know when it's going to be alt of someone with a lot of ruthless friends.)
Surprise PVP is a big part of what keeps the game interesting. The fact that you are never 100% safe is what separates EVE from all the other mindless time sinks in our lives.

As others have said, instead of killing enemies, keep your friends alive by flying a logistics.
Also, that "I feel sorry for him" feeling goes away after 5-10 kills.

Step 1 : Devote all your alts, and yourself again to farming. Build a nice big POS in jita, or another hub. I would go for jita though. Mine/buy the mins and BPO for a Titan. Build/buy the components, build it there. If it cannot be built, do whatever, and i mean WHATEVER you have to a (bunch of) dev/s and get a one-off pass to do so. Join npc corp. Be the first to provide a whole new market there.
............ Step 2 :
Let one year pass, let them all consider you the nicest guy ever. Cloak your titan away, with all the treasures inside.

I'm the same man, it's a curse, I've always been that way. In other MMO's it's fine because there's nothing to replace if you kill someone, but even then the only time I PvP'd was in arenas, where people GO to kill and be killed and it's not at all personal. It's particularly bad in this game because you just know you're missing out on what is perhaps the biggest and, what everybody says, the most fun part. So far, except for a single instance, everytime I've been involved in PvP in this game I've been completely outnumbered and had absolutely no chance of winning and so I just died, but I did try to fight back. The one time I was engaged in a PvP situation where I had a chance of winning, I don't know how the hell it happened because the other guy started it, he fired first, he had a better ship, maybe he/she was drunk or had just bought that character and had never played that race before, but I had the upper hand right from the start in a big way, had the guy scrambled and when it became clear he couldn't win he aligned to something but couldn't escape, so I stopped firing, switched off the scrambler and went about my business. I think I got more satisfaction out of that than I would have done if I'd killed the guy, because then I would have felt compelled to pay for the ship, like you said.
I've even had to stop playing FPS games. Last time I played one was over 2 years ago, and it was Battlefield 2. When I entered a game, I first of all applied to be commander. Commanders don't fight, they direct the battle and give support in the form of artillery strikes and enemy spotting. If I couldn't get that I joined the team that was losing and played medic or engineer and supported tanks/apc's by healing them in combat. Obviously I killed people but it was always to defend myself.
I don't know what you can do if you're bored, and I know I'll be where you are one day. There's the obvious thing that's left for you and that's pure PvP. You don't have to go looking for weaker targets like most PvPers in this game do, you can "pick on someone your own size", do some anti-pirating, or fly around lowsec/nullsec looking for fights but making sure they always fire first. Or there's PvP in the form of trading. People always talk about starting a new character and using the 5,000 credits you start with to make hundreds of millions in Jita by never undocking and just trading. You could join EVE university and train nooblets in PvP or in everything else they train them in. Or you could quit, if that's what you really want to do. I never will though. There's always something for people like us to do in EVE. Personally I just enjoy doing missions and chatting to and helping people in the noobie corp.
If you've been playing for 4 years I'd imagine you have a ton of money... Do lotteries or something. Do competitions where the prize is a PLEX. I don't know, that's all I've got. Hope you find something.

No POS in Jita, it's a .9 system. I think the only normal market hub where you could anchor a POS would be Hek, and even there I'm betting all moons are taken.

They generally won't take characters older than 3 months, if you're over 3 months there's 2 people you can talk to, and you probably will never get to talk to them. I gave up after 2-3 months of trying.

3 months is the average it takes a player to get bored of exploring content, and choose it's path. That makes it angry. Don't want to give the angry man an army of noobs now would you? You cannot fathom the outcome !

Definitely look into the options of helping a corp out, look into eve uni or join a cause.
