Not to mention that after a few ganks the navies and sentry guns will be on them for low sec status as soon as they undock or enter the system. Anyone undocking from Jita will just instawarp to a SS then head for a gate or use JF and undock and jump out while they still have 30 seconds on invulnerability. You won't be able to catch hardly any BR ships. Traders will be docked or in another system so you can't do anything to them. There are 7 gates into Jita, and it would take an huge number of pilots to cover the gates as well, especially with the GCC timers. Trying to get such huge number of pilots into Jita will eventually overload and/or crash the node, which depending on the mood of the GMs, might end up with a ban for crashing the server as most other events of this type have been called off due to this reason when a GM posted in the thread warning them not to do it. Thats the reason hulkageddon is allowed to go on, it takes place anywhere and everywhere.
