They could, however most BRs align and warp in about 3 seconds or less.

My Prorator has 8,566m3 with 3 Expanded Cargohold II's and 2 T1 cargo rigs. Transport ships is level 4. It would hold more if the 4th low slot has a ECII in it as well.
Now my Viator has 10,279m4 with 3 ECII, 2 T1 rigs, and Transport ship 3.

If you are hauling materials everyday, why not go for a BR with a WCS in place of a cargo expander? You give up a little cargo room, but you gain the benefit of a cloak for gate jumps and +1 WCS.
It wouldn't stop a dedicated scrambler ship, but neither would a DST.
