Even though I don't roleplay, I still pick races and whatnot based on lore and what my character is like in my mind. Stats and min/maxing be damned. Even with my earlier characters, before the changes to character creation, I would choose the race that I agree with most and not worry if I ended up with more charisma points. I would also always give my characters high intelligence even if I wanted to train lots of ships and guns, because I don't want my character to be stupid. 
Anyway... Amarr are religious. I can't identify with that to begin with... But they also take it to fanaticism, and they are also racist and elitist. Pretty disgusting people, don't know why anyone would chose to be Amarr.
Caldari are corporate douches, militaristic fascists, and look like meatheads. Pretty much the race of "tools". Companies already have too much power in reality. Caldari State would be a nightmare.
Gallente seem alright. When I first tried the game, in 2004 I think, they seemed very popular. I loved the way the Vexor looked. My first trial character was Gallente, because I liked the ship designs, I could be a long haired dude, and lore-wise they seemed decent. Intelligent, freethinking, moderate, and fond of art. They seem maybe a bit too government-heavy for me though. After that first trial character, all my other characters ended up being...
Minmatar. The race for people who just want to be left alone and do their own thing. The most free people of New Eden, despite their past. They are also the underdogs, which is attractive. I like the tribal feel, and the viking influence. Its like the Christianization of the world never happened, pagan Europe and the rest of the world got to keep their original cultures, and grew up to become space-faring buddies. Pretty awesome. They also have the best music in the new intro videos, and they have some of the coolest looking ships. The coolest looking industrials and capitals by far. Possibly the coolest dreadnaught (Amarr's looks great too). The Hurricane looks awesome too, and the Rifter is a great T1 frigate. I like their logo also. Maybe the worst looking T3 though, too stick-like. 
I always chose Sebiestor, because I liked their description about how they were 'innovative thinkers' and 'tinkerers'. I could also make them all pale and bald and corpse-like with long drawn out faces and pointy chins... basically like Scorpius from Farscape or like Nosferatu. Unfortunately I couldn't replicate that look with the new character creator, but I found a new look I'm happy with.

There are really only two respectable choices when it comes to race in EVE, Gallente and Minmatar. Minmatar suits me better.
