Why does the eve menu have a sub section for certain sounds such as missile effects etc, when there is no sound in space? |

Well you would certainly hear your missiles launching etc/enemy missiles hitting you wouldn't you.
The rest is added by the camera drones which provide capsuleers with thier view of the world. |

The correct reason is that your capsule provides sounds based on the environment around you. As the tutorial (I think, I read this a while ago) says, 'obviously, there is no sound in space, but your capsule has been designed to make up for this, since endless silence is disconcerting.'
Also because it's a game.
