Go with a Scythe. You should be able to make a quick enough escape in it, although the Stabber is quicker. Also, the Scythe is a couple of million cheaper than the stabber (like 4.5m vs 2.5m) so if you lose the ship it won't hit you as hard financially.
What you need to do is figure out, with your skills taken into account, whether you want to scoot away after one mining cycle, or two cycles and fit your ship accordingly. Your first consideration should be "how much can I mine in one cycle" and fit your ship based around that. With three Miner II's and Mining Level 4 along with the bare minimum of Cruiser Level 1 (which will give you 20% bonus mining yield), by my reckoning, and I could be wrong here (hopefully the pros will correct me on this if I am) you should have a 40% bonus to your mining yield. Given that a Miner II yields 60 ore per cycle base, you should mine at 84 ore per turret, or 252 ore per cycle total.
With that mind, and without increasing your skills further, you want to aim to have your Scythe with around 504m3 cargo capacity (exactly 2 yields). One Expanded Cargo module should give you just enough for that (if not go with a named cargo expander), so you can concentrate your other two slots on speed/agility modules. Don't go for the Overdrive Injector modules as they will decrease your cargo capacity - go with the Nanofibers.
Once you're confortable with that, you should at least consider getting to Cruiser Level 3 given the fairly short amount of time it would take for the significant mining yield bonus it would give you and also work on your Astrogeology skill which gives an additional 5% mining yield per level. Fit your Scythe accordingly with more Expanded Cargoholds to replace the Nanofibers as your yield/cycle increases.
By this point you may be exceeding 300m3 ore yield per cycle. You then have the option of fitting your Scythe on the basis of one mining cycle. In other words, this is when you'd use the Overdrive Injectors which would give you a big speed boost at the expense of cargo capacity.
