The community is not going to just come to you, you have to look for it. There are a buttload of corporations recruiting everyday. If you just want to talk with people in local just go to Jita, Oursalaert, Rens, Sobaseki etc. Although those systems remind me of OT in EQ1 at primetime and yet somehow they are even more retarded. Of all the corporations out there I bet there are more than a dozen that would fit anyone's playstyle. This game has got to be the most friendly when it comes to recruiting people into corps of any MMO I've played. It's also got the most mature playerbase of any MMO I've subscribed to. Easily. By far. Not even a contest. It's true that you do find more and more immature "battlenet" kiddies playing the game nowadays, mostly on free trials I'm sure. You can blame WoW for doubling the effective MMO playerspace for that (not that that was a bad thing in itself) but we will now get twice as many retards signing up for Eve as we used to. Fortunately most them will go away when mommy doesn't use her credit card for them to subscribe buy and subscribe to the game. But Eve is very much flavor of the month right now, we'll be seeing a lot of this at least in the forseeable future.
The problem with the apparent lack of players is that the gameworld is so damn big. 5300 systems, and when 10% of your playerbase is in one of the four systems mentioned above and other hub systems like them this exaggerates the "problem".
As for the economy, I played EQ2 as well and that economy is completely fubared. Talk about rampant mudflation, it's unreal. Eve has one of, if not the most stable economy of all MMO's. How this is going to be affected with the sudden advent of macro-miners I don't know, but hopefully CCP will do something about it without harming us "real miners".
I really don't understand your point about there being a void between the the 2 day old player and the 6+ month player, I am seeing the exact opposite. There are a ton of players in that category. Some have already found the right corp for them, others are making their own way in the game before they decide on a corp, if they do at all. It seems like more than half the people in-game that I do a show info on have less than 6 months of employment history. CCP's subscription numbers would seem to support this observation.
