Tbh if you are having an idea to run a similar service like EVE-Files I think you should give it a thought or two before getting into it (based upon 'I wish I could figure out how to set up a server. It seems so easy but I could never get it to work.') as it involves a whole lot more than just setting up a server (hardware, internet-connection, software etc).
After the upgrade it will be around the 1TB class storage (not that much but quite some amount since it's all EVE related).

I think you should continue and expand the idea's to start seeding in torrent aswell.
I have been running sites (non related to eve) which offer downloadable games (open sourced, created either fully by myself or with an team of people) by several means like HTTP/FTP link, Magnet/ED2K and torrent to trial and error what the community wants most.
Torrents are used by the most people because its rather easy to setup properly and gives the best speed most of the time (peers automaticly become seeds after completing download, or untill they shared 100% or complete / abort the download manually).
As with my site i think your community is more then willing to let the torrents run overnight or even longer and it will release alot of resources that can be spend on other improvements (more YARware, coffee for long night, flowers for girlfriend etc).
Im sure you allready done most optimisations you can do for your server but you should look into the disk optimising aswell if you didn't do so allready.
I will explain, normally you have 1 disk / partition which holds all files which delivers under an certain performance level.
One example:
With disk optimisation you let an application check your files for extention (if needed) and file size, which it then catagorizes into small, medium and large.
You would for example have 3 disks solely created to be optimised for small, medium and large files (cluster size) and the files get moves on the appropiate disk.
I first experimented abit with that idea myself and found that it can give boosts upto 500% for certain files.
Better possibility's rise with this aswell as you can manage outgoing traffic much better this way (you can for example cap small files to large speed, medium files to average and large files for slower speeds or what you prefer).
Maintanance will be alot easyer aswell as you can let the disk checking processes (antivirus, defragmenting etc) finish alot faster aswell (large files can HOG up alot of the processtime it otherwise could have spend somewhere else).
There are alot of things you can do to optimise your servers and services and if you have any questions or choke points you can ask me aswell as i know a few tricks here and there (not limited to hardware / disk IO).

In fairness I really wish people would compress their videos more. While it's nice to see the awesome, it's not 500mb worth nice (i.e. the EVE client).

Update on current progress.
Things screwed  I got a BSOD when upgrading the OS, much fun, couldn't do jack as it kept starting the setup every time and died shortly after. Managed to solve it and the software upgrade went fine.
New harddrives are in place and the storage shortage is no more (for another few months). UPS connected and running, heatsink - next time perhaps. Patches and such are fine.
I will hold you to wanting it to be online a while longer, I am expected to show up at a dinner party in 15 min and I prolly have at least 1-2 hours left of moving files, defrag, general lazyness - so I'm just gonna leave it doing the defrag and go to my party 
Hopefully the defrag is done when I get back home tonight but I figured another few hours is something you all can stand (if not I will accept it as your x-mas present to me - the waiting ).
Anyway have a good evening and I'll be back with an update later tonight.
Sorry for any trouble this 'extended' downtime is causing you and your EVE-addiction
