So someones looted from my can and they are now blinking red. My understanding is that I can engage them and concord will not respond. What about sentry guns at gates/stations though? And does my sec status still take a hit?

They're now a legal target for you, you can shoot em to your hearts content, and CONCORD, sentries, etc etc will NOT intervene. Your security status will NOT take a hit.
HOWEVER, keep in mind that once you open fire your target can fight back, ALSO without CONCORD or other intervention.

It is important to note that many people will steal from you in an apparently weak ship, get you to open fire (thus making the fight consentual), then go grab a much more effective combat ship and tear you to shreds with no CONCORD interferance. Basically, if you do decide to fire on someone, even if you destroy them, go hide in a station till the timer is up or they'll likely be back with something bigger.

Adding a few things...
Can-flagging only lasts 15 minutes. This is important to remember.
You, you corp, and your gang will all have 15 minutes to lay some whup down. (Unsure about Alliance)
The thing is... you are mining. They are in combat ships. If you are solo, you'd better have a comabt ship at a station closeby to change to. This assumes that your solo combat ship is an equal (or better) to who just nicked your can. Or maybe have faith that you have friends nearby.
Additionally, can-thieves might also dump your nicked goods back into space (in a similarly/identically) named can. You try to retrieve your stolen goodies... then all of a sudden *you* are the target of can-theft.
Hi-sec piracy happens in a lot of ways, and you need to be careful of how the offender can turn the tables on you.
:Note: The Kill Rights on your Character Sheet are very different from the can-thief rights.
Kill Rights are earned , when in 1.0 to 0.1 space... when you have been killed and you did not return fire in that engagement. You have 30 days to go mano-a-mano, without Concord interference.
EVE is a lot of fun... though a bir brutal, at times. _______

Can flagging doesn't care one way or another about your gang. It does not transfer through your gang.
It only applies to your PLAYER corp. (If you are in an NPC corp, you are the only one aggressed).

Ok... question
Baddy steals from my can. He is flagged for me. I shoot him. He shoots back. I realize I'm in a big mess and warp away.
How long can he attacke me for (without concord getting involved). Is it the same 15mins as when he stole from my can? Thanks

15 minutes from when you last shot at him, not 15 minutes from when he initially stole from your can.
Also note that you won't be able to use stargates or dock in a station for 2 minutes (or is it 1 minute? don't remember) after firing at someone. You'll need to hide in a safespot for a few before docking.

Here's a question for the wise. Say i kill guy a with him returning fire. So he has the 15 mins of free kill rights on me. Now, if he kills me, i get new ship, then step outside and kill him without him returning a shot, does that give us both roughly 1 month worth of kill rights on one another?
