I realise when you get -5 to a Faction when you go into their space you will be shot by the Navy Police? What type of ships shoot you? Do they do alot of DMG? Can you still fly haulers thru their space?

Yeah, would like to second that question, if I get -5 to say some Angel Cartel, then whenever I will go to their space I will get shot by sentries at stations?

Pirate Faction stations only exist in 0.0.

Yes. The ones you see at gates. If you tank/kill them, more will warp in to help. Caldari ones at least throw horrendous jamming at you as well missiles, not sure about the others. Not so much, but it doesn't let up until you leave their space. I don't know why you think haulers are exempt. No you can't.

Since my Gall standings is now about -3 from missions, any suggestions on how to correct it?

Run missions for Gallente, train those social skills, deliberately fail Caldari/Amarr storyline missions and stop doing missions where you kill Gallente Navy ships.->those missions are brutal on the standings drop...

Not really worth worrying about them in my experience. I'm -7.1 to Gallente and when I fly through their space I just get a warning before two frigates and a cruiser attack me.
But the damage is very, very low and they don't scramble. A hauler will still happily trundle through their space; you can even dock without problems.

You could just train diplomacy.
With a -5 caldari scum standing, and diplomacy 3, I am at -3.2 and holding.
Even when I continue to shoot caldari scum officers and do missions for gallente.

QFT. Not saying directly who, but there's a couple red herrings in this topic. If you open fire back at these ships in sight of the customs/police/sentries they will open fire back at you though, and *those* ones instascram/ecm/pop you. You can tank them, but thats about it,, you get jammed so much you actually can't target other ships.

Faction standing has nothing to do with restrictions on travel it only limits your interaction with agents and POS anchoring in that factions space. The standing you need to be aware of is your CONCORD/Security status. It's your security status that limits your access to empire space.
Security status: Empire restrictions
Below -2 = not in 1.0 sec systems Below -2.5 = not in 0.9 sec systems Below -3 = not in 0.8 sec systems Below -3.5 = not in 0.7 systems Below -4 = not in 0.6 systems Below -4.5 = not in 0.5 systems -5 or below = KOS in all empire

Here, let me answer the question you asked, as common for this question you are going to get a bunch of non answers and people who just really don't know trying to answer, or people who just didn't read your question and automatically suggest training diplomacy more.
I did and experiment on test server. I have -6.5 amarr faction standing.
On entering 0 to -4 Amarr space, nothing happened. On entering .5 amarr space, the amar sent a 2 Navy sergeants and 1 Navy Colonel after me, in frigates and a cruiser. They are easily tankable and easily destroyed.
However, eventually I was targetted by Amarr Customs. This seems to have nothing to do with either shooting or tanking the Amarr navy, they just seem to eventually want to destroy you.
Amarr Customs are wicked. You can tank them forever really, but its useless. You are perma warp jammed, perma ECM'ed, perma webbed. So unless somebody else can come and kill the customs for you, you are essentially dead where you are. You cannot target anything, you cannot move, you cannot warp away. You can jump the gate however, but getting to within 2500 from 15k away is simply impossible with the perma web on you.
I've tried loading up on ECCM modules to push my signal strength to above 90. You still get perma jammed. I've release drones before jammed. You get jammed and your drones get destroyed.

I've highlighted the bit that causes customs to aggress you.
If you don't fire on the navy, Customs will leave you alone.
Edit: Just to clarify this isn't instant aggression. Customs don't even have to be around when you attack the navy (even in self defense), but it will give them reason to attack you later. A hauler won't run into any such problem.
