Anyway as has been pointed out, a good player will just hop from SS to SS. Like what we used to do before the dumbed down scanning so that any halfwit alliance ****** could do it.
And, to the OP, if you want PvP with experienced players, don't blob. I, along with most vets, am quite happy to engage at fair odds like 2-1, 3-1 even 4-1 but after that no way.

Can we shoot The Messenger? 
Probes show up on scanner and in local because....listen closely now...they throw off massive amounts of energy! They don't detect things in space by magic...they detect them the same way a radar dish does....by throwing out signals that then get reflected and returned to the sending (and sensing) object. Therefore, the objects being bombarded with said waves get to detect them if they have the equipment, and trace them to their source.

No one wants to spend 5 hours trying to find good targets because the only ones they get are newbs who dont use their overview...
With good skills scan probing can be done in less than 30 seconds. Removing them from the overview would push the advantage too far in favour of the prober. Macro'ers wont be affected as all they do is ss and then cloak straight away. Also from my experience there is always somebody who wants to fight in EVE you may just have to travel 20 jumps, which in this day and age isnt far at all.

If one comes within visual range (160km or so) then yes they do right there on your overview. They usually get lost in the wrecks, stations, and collidable structures, though.

no it's you that are too week to survive or profit in the world of low sec, in eve it is and have been a completely valid tactic to run and hide when trouble arive, and just about any "elite" PvP force you can think of have done it on multiple ocations.
Usually that sort of cry the OP comes with represent someone who cant/wont go after the numerous understaffet gatecamps or hunt fellow pirates, but must stay to the easyer pray, EVE is not counterstrike in space, theres no part of the EULA that says it must be 10x harder for the carebear then the pirate to survive.
In planatary life whole speciels have survived alone by their ability to avoid predators and it's not always those who foolishly engage in every fight that profits the most, eve is not meant as a game where gentlemen codecs of dualing prevails over less honorable tactics of hiding when you dont have 10:1 ods in you favor!

I don't think they show up on the overview. I only can get em on my scanner with the 'overview settings' turned off. I've tried rightclicking 'Add to overview' but I don't have that option.
If it should be possible, let me know and I'll clean up my settings again....
To the OP, removing probes from scanner is not necessary, you already have the option to destroy the probe after a succesfull hit. A smart player who wants to 'risk' it in lowsec is aligned and at speed towards an object or new safespot anyway.
When no probes are showing up, he will have his scanner reduced in range with no celestial objects in range and the moment ships show up on the scanner (which means ships are heading close to him and most likely towards him), he's warping off instantly.
Heck, that's how I sit in a safespot... doesn't everybody?
