I run 2 accounts on a 1920x1200 and a 1600x1200 with a 7900GS. Framerates around the 15-25 marks with a few effects disabled. I notice a slowdown when the screen gets busy, but it's quite playable.
CSD-6400, somewhat overclocked
2Gb PC6400
EvE memory cache set to 500Mb. <-- this helped quite a bit btw. Was good for 3-4 fps or so.
I wish someone would bump&update that thread that had the way to run EvE in a RAmdrive now that I have 2Gb (and am thinking of getting another 2Gb)

nice and smooth. Lags only in overstuffed plexes. I think its server-side, anyways.

3840*1024 , I am running the Matrox TripleHead2go device across 3 LCD monitors and I have never looked back, it is awesome and I have loads of room for open windows.
btw, I run old graphics cards, 2 7800GTX in SLI and it copes well

Usually run eve in window mode at 1600x1200 on a 1920x1440 desktop (19" CRT). Gives me a bit of space under the eve window to keep track of IRC and stuff like that.
edit: d'oh, misread the question... Using a 7950gx2 atm. Dunno what resolutions it can handle other than the max the monitor can handle (2048x1536@60). That's been pretty much standard for a long time though as far as I know...

I run under linux, which is much more forgiving with resolutions
Thusly, I play eve in windowed mode at 3200x1200.
Nvidia 7600GS, Dual Acer AL2016W monitors.

1920x1080 on a Sony 42" HDLCD when in full screen mode and 1280x768 windowed when I have multiple accounts running.. With lod off and all the card effects maxed it looks like a window into space..

got a 19" LCD
i play windowed and i like to be able to see my start bar while playing (msn, vent, browser, winamp, etc :) ) thats why im not playing 1280x1024 :)
edit: 6x AA and 8x AF (can go up to 16x) and can run 3x accs whitout FPS lag

Running dual screens with 1280 x 1024, running eve online at 2386 x 864 (approx, windowed) accross both screens with all effects switched on and having approx 35fps in space; PRICELESS.

Got a GeForce 7600GT, an AMD64 3500+ 2.2 GHz + 2GB RAM
Though I run Eve windowed 1024x768 with all the settings waaaay down. Never know when I'll be called for a Fleet engagement.

2560x1600 on a CRT A7217A monitor.
2304x1440 is a bit easier on the eyes though.
