It depends on the situation. I know a lot of people here are suggesting T1 frigs, and that is actually what I would do. EVE is a game, and so I would choose to play it.
However, depending upon your situation, that might not be possible. If you are unorganized, fighting back is a hopeless choice. Fighting back will just give them what they want - easy targets who have no chance of hurting them. If this is the case, it would probably be better to run away. Sometimes discretion is the better part of valor. Spread your corp out so that it is harder for them to do real damage. If they are camping your station and you can't escape log off and play a different game.
It should be noted that having everyone leave the corp and join a new one can be considered an exploit and I think people have gotten in trouble for that before.
However, if you can get your stuff together, get organized and get some decent intel on them, guerrilla warfare tactics could theoretically hurt them a lot more than they could hurt you. Because you are a newer corp, you have less to lose. T1 frigs and destroyers are cheap and replaceable. HACs, and Battleships are not. Or rather, they are but only after hours upon hours of mission running. You can use such "cheap tricks" as mass ECM to make it so that they don't even have a chance of locking on to you. No target lock means they can only hurt you with FoF missiles or smartbombs. If they use smart bombs in high sec, you can make an alt in a noob corp to get in range of their smartbombs and get them CONCORDUKKEN'd. Thus the only thing they can do while jammed is to use FoF missiles, which they may not have thought to bring with them.
Have any wardeccing corps ever been defeated by a target who fought back in T1 frigs and etc...? To be honest, I doubt it. They want the action, and they are probably using good enough ships that it would be nigh impossible for them to die to T1 frigs in high sec. They just wait out aggression timer and dock if things get bad. In all honesty running away is the best choice for "defeating" them, though I personally would choose to fight back because it would be fun IMO.
