To answer the question in the title, it's because you were afk and you were in a position where even a hauler can kill you. Not wise.

Dude, you can't go AFK for even 5 seconds in low sec, let alone 5 minutes. This is a harsh lesson. You got your cruiser killed by a hauler. Let the shame be a motivating force to improve your caution.

That would be why you died then.
A vexor is a drone ship so drones are its main weapon.
It's unfortunate that you died like this, but you'll have hopefully learnt a valuable lesson: never go afk in low sec (or 0.0) while still in space. If you need to go afk, dock, or warp to a POS if there's one nearby that you can use.

You only have to Ctrl + Click on the offending miscreant, mash F keys, Rightclick + Launch on 'drones in bay' window, Rightclick + Attack on 'drones in space' window. Your hundreds of DPS would melt him instantly.
But if you walk away from your computer and return to find a pod, that rather defeats the point of having all that equipment.

I have flown a "battle" mark 5 for quite some time now. I've amassed 86 kills in the ship. Including MANY rifters, and several jags/wolfs. Far more mining cruisers than you can count as well. A few combat cruisers, and a mining Brutix.
Do not underestimate the Iteron Mark V.
If you would like a demonstration, I will gladly take on any T1 frig (can be t2 fit)in hek during downtime on my current contract :)

To all you nay-sayers - You better watch out.. Haulers, mark 5's especially can fit a rather nice tank :)
