I could canflip and only engage the "escorts" that arrive and engage me (or, better said, the flipee's new combat ship out of storage). But I'm not evil enough for that. I could go in lowsec and start trouble, but I'd probably end up paying the poor sod for whatever I destroyed from under his pod. I could go in 0.0 and just get wasted by a gatecamp, but I don't feel like doing that.
So... now what ? _

Go into lowsec and start trouble with people you think will be a challenge, despite your moral inhibitions. You'd be surprised how quickly yarrness grows on you, then you can go for the easy targets. It's quite scary, really. I think the catalyst is how pathetically some of the carebears whine at you after you blow them up. You develop a hatred for them pretty quickly.
I had the same problem. Still do, occasionally. Then I think back to some of the smacktalk I've got and I'm scanning for a target two seconds later.

Go "Anti-Pirate" and attack all the flashy-red targets, and those that do the can-flipping and such, and as the boredom overcomes you, you'll eventually start just shooting everything you can and leave your morals behind.

aka "The Allure of the Dark Side".
TBH, I respect pirates who honor ransoms far more than anti-pirates who are honorable in their dealings with neutrals, yet give no quarter to pirates.
At least pirates are earning a (dis)honest living. Some of the antipirate groups out there are far more scary and disadvantageous to even associate with. -

Voting shoot everything that blinks. The difference the sentry guns being on the other bloke and not you makes is pretty epic too. It also enables you to take on multiple targets at once, if you like dying a fair bit
Failing that, nanoship, jump into gatecamp, kill smaller blinky people, run from larger blinky people and recons

It grows on you. The squishes of pods and distant screams of anguish as you obliterate yet another carebears hard-earned ship, are both strangely addictive..

Don't over analyze the game. Its just that... a game. Your actions in game is not a true indicator of who you are out of game. Relax and make some friends. Find your self a nemesis. Have fun rather than trying to figure out if there will be moral implications for you actions.

Join a pirate corp like I did, after over a year of carebearing. Then, when you participate in a gank squad or run up noob-alt-hauler killmails, you can tell yourself, "Everyone was doing it. I just wanted to be popular."

Oh Gods yes. In real life I have the highest moral standards. In the game, I'm a slave-peddling, dirty pirating honour-bound mercenary. Only fools fancy me a cruel person outside the game.

Go to lowsec. Wait. Watch shiney. Attack shiney.
You cant resits the basic insincts.
Ive been in lowsec mostly for what... 1-2 months now... 2 times Ive engaged in pirating, resulting in a dead falcon one time and a freighter wreck the second time.
Pure pirating is overrated, oppertunityhunting is a nicer profession.

The easiest way to solve the moral obsticles when trying to become a pirate is to do the following.
Don't try to be come a pirate. Doing so, only makes you act the way you THINK the real pirates act. You are a carebear, so be a carebear.
Except, carebear in low-sec. After a while, after losing enough Miner IIs, Strip Miners, Mining Barges or battleships... you will morph into a heartless pod pilot with vengeance.
You will then, become a pirate. You do not have to be taught, you will "understand" the ways of the Holy Yarrr.
This period is called The Enlightenment or The Birth. A pirate, is, who you'll become and anyway you act can qualify as "pirate" actions.
Sometimes, some might slip into darkness and be blind of the True Way, the Golden Jumpgate (monks humming). This is called "pity", and some claim there's a definition to such a word, but I can't find it in my personalized dictionary. Must have scribbled it out... anyways, it's just a word and probably isn't important.

You're playing a game, being "evil" is a notion connected to the real world, and even there it's mostly used by zealots.

Get in a Frig, speed tank it, and go to lo sec fighting everyone you find. The challenge is worth the risk, and it is a cheap way to not only pirate, but not worry about losing all your money. Not to mention most pirates are good chatters and you can learn a lot. Oh and usually the others will attack you first so your not really even a pirate.

Ok...stop can flipping, it's not piracy, it's just ****
Yes go to low sec. People there will blow the crap out of you. That may harden your soft skin
You will go back and blow the bejesus out of them. This is piracy, your heart should beat fast, and you should smile lots when you win.
Leave the ******** can flipping behind...it is the most carebear pvp there is

I used to feel bad about the killing when I first started. Even to the point of sometimes replacing ships and giving money to my victims, especially if they were fairly new and were suckered by game mechanics (aggro rules) that I happened to understand better.
My oh my how things change in a short while. DIE MOFO! DIE!!
As said, it's just a game and nothing is really more fun that to see someone get all bent out of shape and screaming in local after you've popped them. We have a special place on our forums for these delightful convos
Since you seem a little morally apprehensive, pass on the can flipping in high-sec, where there is some expectation of safety, and head straight to low-sec. It's a dangerous place and everybody should know that everything is up for grabs.
---- Some people say I have a bad attitude. Those people are stupid.
