There should also be much more variation in what can be found in a solar system. Currently a system with like...30 belts will all carry the same ore, which is just tedious at best.
Where is the sense that all asteroid belts scattered around a star must have the same ore and in the same quantities?
Why not make it dependant on their location and any stellar objects nearby?
Asteroid belts very close to planets would not allow for large Veldspar asteroids as they would be torn apart, so they would have more valueable, smaller asteroids.
The belts further away would not be under such an effect of gravity and thus could house larger asteroids such as Veldspar.
The belts themselves should also differ, I'm not particurly happy with finding Veldspar, Scordite, Pyro and Kernite wherever I go. I would much rather see an asteroid belt containing like...95% Pyro and then some trace amounts of other ores, with the next belt containing 50/50 Scordite and Kernite.
New ore types would also be a great idea, its weird that Tritanium and Pyerite can be found in every single hunk of rock across an entire galaxy, I would much rather see an asteroid giving just Isogen and some Nocxium, or Mexallon and Pyerite, or other ores yielding only one mineral type.
Just some thoughts... ------------------------

There is one thing I always found awesome to see, a huge ice belt stretching for over 400km. A truly large belt where the distance between one end and the other is like 1000km or something would be an awesome sight, especially with all the miners having their own piece of it.
I suppose a true (solar/system) asteroid belt could be done, one or two per system and then minor belts per planets (planetery rings?) You could have a bunch of asteroid spawn points spread across the system's star in a circle.
Would also add a bit of interest in finding your own corner of an asteroid belt, something like 100.00km off the warp in point, or maybe a few AU.
Asteroids should also be allowed to grow much bigger then they do currently, a veldspar roid can (at max) hit 16255.6 in radius (32km size) which holds only 150k of Veldspar, which I could fit in my Hulk in a single cycle.
Now ofcourse an Arkonor roid of 32km would be off the rails but it would nice to actually have an asteroid that...takes a while to deplete. ------------------------

Another point of thought concerning mining is cargoholds. Yield is fine, increasing yield just unbalances things and it goes fast enough as it is. What however could use a boost is the amount of cargo you can hold, currently it doesnt take long to fill up a Hulk with two cargo expanders.
Although corp mining with a hauler can be done, it has the risk of your ore stolen seeing as corp mining demands the use of a jetcan. Seeing as hold mining is something that should not be limited to the Hulk, maybe another ship class or something should be brought in to increase cargo capacity. ------------------------ Ship Yield Calc Improve Mining |

Mining just needs more interaction, any interaction... May be efficient to watch SGA while mining but still, there should be more involved than just parking your Hulk in the belt ------------------------ Ship Yield Calc Improve Mining |

Those who to semi-afk can grab an Industrial with miner and park it 1.0
I suppose it would be possible that the current mining system stays, but that sort of a minigame is added that can boost your yield by micro managing the entire mining process (targetting specific areas, handling incoming ore etc). ------------------------ Ship Yield Calc Improve Mining |

Anything to make mining more interactive gets my vote ------------------------ Low-sec is like sailing along the coast of Somalia...

Thing with your second point is that our RL asteroid belt is so thinly populated by asteroids that you can fly through it without even hitting one. Considering the speed of the barge, spreading asteroids to mine 100 or 1000km apart would be quite annoying really.
Depends really, you can warp to a roid if it's 150km or more away, and if it's big enough it might be worth it to warp around a few times. You could add some smaller roids around the big ones, stating gravity did it ------------------------ Low-sec is like sailing along the coast of Somalia...
