Thanks Alski I was kind of worried that people would be put off by the length of those posts. I do have one other idea that I was going to include in that second post but when I decided to put in some backstory for the Demolisher cruiser I wasted too many allotted characters and couldn't fit ship idea #6 in, so here it is. Last post for now I promise.
Escort Support Ship (T2 Battlecruiser, based on tier-2 BC hulls) - The introduction of Heavy Interdictors has left many pilots clamoring for an effective counter to the reemerging threat of Low Sec blockades, long absent thanks to improved warpdrive technology that allowed pilots to warp directly to stargates. Propel Dynamics researchers in conjunction with Kaalakiota R&D funding introduced a module able to counter a focused warp disruptor, but this alone was not deemed sufficient. To whit, the Escort Support Ship was created, which features a broad suite of ECM and gang assistance bonuses. These ships can shrug off enemy fire and help friendlies move through enemy blockades, and they can also capably support combat operations in fleets. While the ESS ships all have eight high slots they can fit very few weapons, and are meant for using those highs for support modules. Very high shield or armor resistances and a sizeable drone bay provide protection for the ESS itself. Escort Support Ship features are as follows:
1. Immune to warp disruption (natural ship bonus.) ESSs can only be scrammed by focused warp scripts and HIC/Dictor bubbles.
2. Warp Dampener (high slot module) - Nullifies focused warp disruptors. When fired at a Heavy Interdictor this module reduces the warp scramble range to zero. However, as the Heavy Dictor's systems attempt to counter this the Warp Dampener must fluctuate its frequency to counter-counter the disruptor. This means that there will be a moment or two between each Warp Dampener cycle where the focused warp disruptor regains a jam on its target. Also the Warp Dampener does not have as long a range as a focused disruptor script, falling short by about 10km or so.
3. Remote Warp Core Stabilizer (high slot module) - Adds +2 warp core strength to the targeted ship. Excellent for assisting in small gang warfare and belt ratting ops in pirate space if the fight turns against the ships being supported by the ESS.
4. Fitting bonus for Remote ECM Burst (natural ship bonus.)
5. Fitting, range, and cycle time bonus for large remote repping systems (per level ship bonus.)

I'd invent a salvage class ship, probably designed by Ore. It'd get a boost to salvage modules and tractor beams and have eight high slots to compete with salvage destroyers, at least two or three midslots for MWDs and what not, and at least two low slots for any cargo expanders or anything. To compensate for it's sheer salvage awesomeness, obviously, it would be **** in combat. Low defenses and horrible offenses.
Also, Tier 2 destroyers to match each race better (Drone based Destroyer for Gallente's, Missile based for Caldari, etc etc). --------------------------------------------------

Assault Gunboat, Cruiser Class:
Role bonus: LARGE Bonus to tracking speed and range of FRIGATE-sized turrets.
Assault Gunboat Bonus: armor repair/shield boosting per level
20m^2 drone bay AND bandwidth on all races ships
Reduced grid and cpu to account for frigate sized guns on a cruiser's hull, while still allowing a beefy tank.
Based on the hull of the Tier 1 EW cruiser of each race, with only extra highslots added/moved to bring the count up to 6.
No T2 resistances

Basically it would fulfill the role that destroyers cannot. It would provide a sturdy anti-frig platform. Prerequisites of destroyers 4/motion prediction 4 to train the universal "Assault Gunboats" skill and then racial cruisers 4 to fly each races ship.
Not exactly an earth shattering ship, but easy to get into for newer players and is a decent answer to frigate swarms and even speed fitted ships, if it was given a large enough bonus to tracking.
Veteran players would likely pass over it and just travel with a minmatar recon to take care of small fast targets, but they would also surely be happy to have a new player in one of these along to lend a hand with pesky interceptors and their ilk.
Since it is a narrow use ship that is neither high DPS nor a strong tank it would not be too big of a deal to have their build costs around the same as a tier 1 BC.
It would also allow a logical progression from destroyers for those who wish to fulfill a role as anti-support.

I would probably make a second tier of Destroyers, although I would need to think long and hard about the specific purpose, dimensions and slots of each of the Destroyers before saying more. I just want to flesh out that class of ships. ---
