This is not an issue of the OP not being able to deal with can flipping or thinks it's highly unfair it's happening to him or doesn't understand game mechanics.
The OP is simply wondering why people are doing it to him, as he is not an isk farmer or doing anything wrong - he's merely playing the game.
Answer: Because they can. If there's one thing people love it's buggering up another mans show. Fact of life, in no ways limited to computer games.

Ive never tried this but you could. Is it possible to drop off a bunch of GSC and then tractor them to the same spot, Mine into them and then pick them up/tractor them to the next mining spot in the belt. Im aware that someone could pick up the GSC but would they? I mean they cant open them and cant pick them up if they are in small ships anyway. They would have to get a hauler to move them.
Its just an idea. I need to try this _)

The only thing keeping someone from looting a GSC is it's password. The password on a GSC only works when it's been anchored. An anchored object can not be towed. I'm afraid your plan is flawed.

People WILL flip your can. Period.
Posting in forums about that will even bring more flippers to your spot, and whining about ore theft on forums will inflate their epeens.
To avoid that. 1. Go to a lev 1 security agent. 2. Roll missions 3. When you find a mission located in an ore area, remove the NPC rats 4. Mine the ore using your jet-can method 5. When the mission is about to expire go back to your agent and report it as finished. 6. Repeat steps 2->5
The method is not 100% secure, advanced players will be able to reach you anyway. But the average can flipper is dumber than a WoW player, so you will be safe from most of thefts.

Try mining in mission deadspace. Run some missions and when you find one with asteroids you can mine it out in relative peace.

People seem to forget that you can only anchor one GSC per 5000 m, if you don't anchor them the password will not work!
