if you cannot move to a quieter system (this can often be the easiest solution), try to see if you can use one of the following solutions:
1) Mine into an anchored, password secured Secure Container. OR
2) Team up with a friend (or a 2nd account) with a hauler, and transfer the ore immediately to the hauler.

Like a couple other posters have said, don't mine in populated areas. There are several good locations to mine, far away from the central hub areas where thieves are more common. Use your map and see how many pilots are active in a system, scout it for the roids you want, then go to it.

I mine into a jet can with a bookmark in it. I have my alt in a Bustard scoop everything up immediatly. No one attempts to flip my can. If they do, my other alt in an Absolution or Harbinger (that has a mining link) pops them.
Or I mine solo in my Hulk with two Expanded Cargohold II's and my two Cargo rigs for 17,199m3 of cargo and just mine and redock every 15 minutes or so.
When I mine with my alts I use MLU II's in the low instead and pull in 1703m3 of ore per laser per every 159 sec cycle.
Try one of those.
Now if I could just find a decent belt to use my Hulk in....

Oh for the love of Veldspar!
There's nothing more enjoyable to me than watching some hapless idiot flip my mining alt's can. Surprisingly, they never expect to see my main warp on top of them with a battlecruiser. 
Oh, and by the way, can flippers are flagged to your entire corp. Whine to them, not to us.

If you jet the contents of your cargo, it's in public view. It's 95% public property, save the the can itself that you still own. You are putting something out there for all to see.
Remember, EVE is all about risk versus reward. Using a jet can in mining RISKS the contents being taken, the REWARD is a larger place to store the ore as you mine.
If you are not willing to endure the risk, don't do it.
Man, this expectation that putting something into a jet can is a "safe" place is like expecting to jump off a bridge and not get hurt.
Don't want to get hurt, don't jump off the bridge. Don't want to loose your ore, don't use an unsecure method for mining.

Usually a Battlecruiser or something orbiting around your ship is more then enough to discourage a can flipper.
Can flippers are all about risk v. reward and tend to use weak ships that can pop a bardge or a mining cruiser. They will shy away from pretty much anything else.
Of course the easiest thing is to use the jetcan/secure as a transfer can with a hauler right next to you.
I personally think its about time CCP allowed direct ship to ship transfers if you are fleeted with your hauler.

Eh, you technically can do that with carriers. Besides, a secure can or two should be enough to temporarily hold your ore until the hauler gets back from station.

Besides, it's not really your can, anymore, once you've jettisoned it. Not in any practical sense.
Possession is the ownership that counts. The rest is decals, paint, and a JCIN (jet can identification number) buried in a Concord database somewhere.

I concur with several existing recommendations: move to a less-populated, quieter system: I remember from my empire mining days that Amarr space was like an empty graveyard, but the graves were filled with candy -- kernite candy.
Failing that, try to use secure containers in 0.7 sec space or lower. Granted, they fill up a lot faster and in many cases aren't worth the hassle of setting up, but it's an option at least.
If mining solo is not a requirement, you can mine in groups or with protection: probably not worth the hassle for many empire miners, but it's an option on the table at least.
If all else fails, just don't mine into a container anymore. There's nothing wrong with mining straight into your hull and docking after every cycle: it guarantees ore security at least. ---

I recommend ninja mining instead of hauling it to the station. It saves time. Here are the five easy steps:
a) Set up a safespot a short distance from the belt (say 10,000km). b) Set up several BMs several 10s of km from the belt warp in point that are on the outside of the belt. c) Warp your mining ship to a belt BM, align your ship to the safespot, and mine until your cargohold is filled. d) Warp to your safespot, jettison your ore into a named jetcan, warp back to the belt BM. e) Repeat steps c through e until you're ready to bring out the hauler.
If you want to confuse the ore thief and waste his time, drop a jetcan with a few units of ore and ninja mine. Eventually he'll stop bothering you and you might be able to resume your old practices. ---------------- Mutatis Mutandis |

Precisely. You're still making a living. Granted, not as "efficient" as you might like, but that's the trade-off you get for safety.

Towman,
Although tempting, I won't flame. Instead, I'll provide solutions:
1) Move to a different system and mine. 2) Join a corp or get some friends who wanna blast these can flippers. 3) Mine into anchored secure cans. 4) Get the skills up and fight them.
