I've been playing EVE for a few days and have been coming across various things like Spiced Wine, Metal Scraps, etc. The "info" only gives a vague overview about what the item is. But what are they used for? I can see that they sell on the Market. I'd like to be able to decide whether I want to sell items or keep them for myself, not just sell them because I have no idea how they could be used.
Is there any website with proper information about them?

Some of them are used as POS fuel.
Most are just NPC trade goods - meaning they're bought or sold by various NPCs at various prices. Very rarely any major amount.
Essentially, treat them like any other market commodity. Sell them to the highest buy order you feel comfortable with, or set up a sell order if there are none you like.
Other than the select few that are used for POS fuel (Coolant, mechanical parts, et cetera) they have absolutely and entirely no in game use. ----------------

Reprocess the metal scraps! Those things usually hold a bunch of the more expensive minerals.

No website about them, because for the most part they have no real use.
There are soem that are actuall useful for players. Those are:
Data Sheets - used int he blueprint copying process. Coolant - Used to maintain POS's. Starbase Charters - allows you to set up a POS in Empire space - providing your corp has enough rep. Radioactive materielas - POS maintenance, IIRC. (If anyone knows of any others, please add 'em here - might as well get a list going!)
The rest of it is FLUFF, and not usable by players. They can be sold, and soem trade routes for them exist - the profits tend to be low, and the risk high as most of the buyers are in lowsec.

EDIT: Metal scraps usually reprocess 1 metal Scrap - 7 Tritanium - your mileage may vary :)

I traffiked in trade goods early in my career, can't say it was immensely profitable (i was making a few mil a day at the high point - i'd dock at a system, see what they sold, look for another system that bought at a higher price and loaded up. rinse and repeat at the destination system)
Mostly it was just a way of exploring, but if you want to make a living at it you'll need a freighter (or at least an orca) and a hefty chunk of ISK to invest - an individual item may have slim profit margins, but when you multiply that by hundreds of thousands of units, it can become worthwhile.
The thing to remember is the most obvious trade routes (those within a region) have already been worked dry by other people doing the same thing. To find a good trade route you'll have to check prices between regions (and again, easy routes are likely already picked clean, so expect to put some effort in - spreadsheet tracking ftw)

Trade goods are used in T2 manufacturing.
Ok, they arent a particularily large part of it, but no Construction Blocks, no Kitsunes.
Mostly though, they are an opportunity for poor haulers to make a little seed capital.

Honestly, while the above advice of trafficking them about from station to station for profit isn't wrong, per se, the same process can be used for trading in player made/sold items for considerably less work and considerably more profit.
NPC trade good routes were profitable, once upon a time, but were long ago nerfed into oblivion. Currently, you'd be lucky to make 200k for each hour invested. Which, even if trade isn't your thing, could be outdone by almost any starter profession. ----------------

They changed metal scraps a few months back so they now reprocess into 500 tritanium (less taxes and refining penalties).

about a year ago it was profitable enough that someone brought a freighter full of long-limb roes into lowsec, we promptly destroyed said freighter and
right click -> sell + 730mil 
dammit, I can't link to the image, stupid griefwatch and their "cool" photo gallery, or w/e they want to call it.
