Federation starship from Star Trek with phasers and torpedoes or Caldari with Railguns and Missiles?
Star Trek ships are passively shield tanked with very high resistances hosting weapons similar to those of the Amarr but more powerful, with faster rates of fire and they have photon torpedoes which according the tech manuals use antimatter as it's explosive (Not exactly legit seeing as how Antimatter doesnt explode with force, just evaporates the matter it contacts, releasing most of it's energy in the form of Gamma radiation.) Note Trek ships have paper thin armor.
Caldari are Passively or actively shield tanked)
I'm going to have to say Trek ships would win most battles. Except maybe those against Amarr ships.

A "q" entity or some other silly crap added in TNG would show up and put everyone from star trek in a sherlock holmes story, and worf and data play poker for comedy relief, then they solve the mystery of the missing locket after many long wooden dialoges and are released from the fantasy. Picard gets back on his ship and after chatting with everyone and engaging in dignified humor says "make it so", but when nothing works and mary poppins appears they discover they're trapped in the goddamned holodeck, again.
Meanwhile the people piloting the star wars ship got bored and went looking for hookers.

Caldari because the eve devs can manipulate the damage and tank at will whilst the star trek writers would have to write up a draft and submit it to the editor only to be sent back several times for redos and silly changes before they could pull some technobabble last minute save out of their arse like the boomheadshot anti-borg transphasic torpedos. Also trek ships don't have GM shield extenders.

StarTrek ship would win obviously once the eppisode is written
startrek torps are better they cause damage to shields armor and structure aswell as having a far superior explosion velocity and radius
lasers(phasers) on everything!
with both they are dealing omnidamage
startrek ships can structure tank for allmost a whole movie even if they forgot to install breakers
While ccp devs could alter the caldari ships and weapons stats to obliterate the startrek ship, it would take dozens of threadnaughts of players detailing exactly how their ship and weapons are inferior and how they get killed over and over again
and maybe just maybe after 2-4 years you finaly get the anouncement of a buff!
but after months of testig on the testserver you realize that to compensate for the buffs they nerfed other stats wich turn your ship from bad to worse

We were just discussing this matter this evening with some friends and we concluded that Enterprise is a torp Raven armed with lasers. I'd place my bets on the torp-laser raven if engaging cruise-railgun one ;)

star trek ships travel a few hundred times faster than any ship in eve, and im talking impulse not warp. they can run circles around any ship in eve and no eve ship will be able to track them.

According to Star Trek lore lasers cannot even hurt their ships with the shields down let alone with shields up. Then there is the speed problem a Star Trek ship will just warp in circles blasting Eve ships to bits. Not only only are Star Trek ships faster but there weapon range makes Eve ships look like pea shooters. A Star Trek ship will just circle us at 2 AU distance away staying in warp and blasting us to bits. Dont forget Star Trek torps go into warp and follow your ship.
Star Trek ships have the perfect anti Eve speed tank weapon, a tractor beam that can target other ships. Star Trek ships battleship size weapons can track fast moving shuttles with very high hit chance.
Lastly if a Star Track ship was losing one of the crew would sprout some techo babble and invert the tachyon beam though the deflector dish while modulating a subspace interference array. Which will cause them to win.

Get a falcon,problem solved since the enterprise couldn't lock. Then get a Leviathan and focus DD them. Surely no amount of techno babble can save them.

That wouldn't work. The Enterprise would lock you at 2AU away. Which is way, way outside the Falcons jamming range.
As for the DD how's it going to lock let alone hit a ship that never comes out of warp? The Enterprise fights many times over the speed of light. The range Star Trek ships fight at is often well beyond the Eve ships sanning range, well beyond lock range.
The Enterprise could torp to death the Leviathan without the Leviathan ever getting to see what's hitting it.

Galactica outguns a Tempest so much it isnt even funny, its basically down to:-
24 main batterys each mounting two large calibre artillery cannons at least 1400mm each maybe larger
514 smaller calibre point defense cannons possibly around 220mm to 425mm
12 strategic missile launchers
Minimum of four squadrsns of vipers with around 20 per squadron

The ability to fly at sub-light velocities and rings around a Caldari ship with railguns, whose guns can't even track because of the transversal? Lawl. Also, lolmissiles.

Trekkies can lock and shoot at stuff over 250km, fire while warping, disable subsystems, and outmaneuver everything in EVE.
Even if the Caldari somehow got superior weapons and shields the feddies would peck them to death from a distance at which the Caldari can't retaliate..

speaking of space pudding. remember the episodes with janeway fighting some dubios species from some kind of super-space-pudding universe? not only could a federation ship destroy their ships, it also almost killed their entire dimension by inventing some simple technology within a few episodes/months.
so by putting a federation ship against a raven you do not only risk the destruction of said raven but also summon the end of the world... of eve online 
and since time travel is almost trivial for trekkies they could fly back in time and do it all again. and then again some more.
