Very likely just random stuff, but Home Guard's very worst agent's first name (if taken as a Finnish word) is "poo". The second name isn't exactly meaningful, but would likely translate so that the whole name is "poo shanks".
There's a lot of stuff if you manage to trigger certain error messages, such as trying to station trade with yourself ("you would likely steal all of your stuff" kind of thing) etc. Getting a mission from an agent when the mission selection script fails is pretty epic, too, as the agent presents the error message, continuing with "wait, what did I just say?" kind of thing.
From dev areas: Not exactly an easter egg, but apparently, the GMs have a spa and a laundry in Polaris.
System descriptions: EC-P8R, famous for its camps, reads "Get the pod! Get the pod!"

There are some funny things that slipped in. There are a number of completely useless items that cannot be sold (but can be contracted) that are nothing more than items with funny descriptions. I've found a number of such items plexing. One of them is "flower power powder" and another is pillaging 101. Neither serve a purpose, but are funny things to find. I have tons of others too like that. There are also some interesting system names including 4-****and Odin.
Some scenery could also be considered an easter egg, there are a number of destroyed stations at random planets through out eve. They look like the abandoned/destroyed stations often seen in missions. Some stargates also have random LCO wrecks around them like the front half of an apoc. There is also a npc caldari titan somewhere in gallente space but the system escapes me.
Edit: LOL, the forums edited out the dirty system name. I'll give a hint as to what it is, it's 3 letters starting with C and ending with M.

There is a stargate somewhere in caldari space that sits under the wing of a destroyed caldari station.
There used to be a system that had an asteroid belt inside a planet, but I think that was an accident, because it got removed a few patches ago.

No ones gotten to the Gallente ships. On the Domi, if you look underneath and from the back, the lights look like a guy. If you zoom out, it becomes a fat guy.
The Ishtar also has a smiley face in lights, and a body too.
Most Gallente ships have something on them.

There's a system in Kador called Hilmar, there's also one in Metropolis called Erlendur (named after hellmar and explorer) if that counts as an easter egg.

I just did this. Worth it just for the stargate to that system. They also show up in plexes elsewhere, much like the signs apparently do. I then went on to see the eve gate for the first time. I wish I'd brought a secure can...

It's both Iceland and eve money.
Also, search for "Plagioclase feldspars" on google ...
(I still wonder if CPP just lack the imagination to invent like 10 names for virtual asteroids).
