When enemies are shooting me, is there a way to know what type of damage they are doing? I have a thermal and EM armor hardener, but I don't know if i should turn them on when they are shooting missiles.

Lasers are bright and shiny beams, and all do thermal/EM.
Hybrids and projectiles don't really have a noticeable graphic associated with different ammo types, so you kind of have to guess by ship type.
Missiles are colored differently by damage type, but the difference in color can be really... subtle, especially since some systems apply color filters.
Probably the only way to tell as a new player is going to be to turn on the hardeners and see if the damage goes down. Hardeners tend to use a relatively small amount of capacitor, in any case. ---

If you look here in the EVE Players Mission Guide it will show you what type of damage the rats do by type, Guristas, Sansha's, Angels etc.
For other players ... other than seeing Laser beams (Amarr - EM & Thermal) ... *shrug* but if you are familiar with their ship types and the weapons those ships mount - you can have some idea.
For Hybrids (Gallente & Caldari) - they do Kinetic and Thermal.
For Projectiles (Minmatar) - (like missiles) they can do anything. It just depends on the ammo the guys loaded.
So - when you run a mission - look to see if there is a specific type rat listed for that mission. There will be a little symbol for them if there is. Put your cursor on that symbol and it will tell you which ones they are. If it's just a little yellow circle - that means mercenaries - and they could be anything.
So, Mission Runners can often mount rat specific resists - but - you will often see PVP people using multi-spectrum resists like Invulnerability Fields and EANM's - since they don't know how the other players are going to be fit. Even if some guy is from one faction - and you know which faction he/they are from - they could still train anyones ships and weapons.

if you do pvp you can also look at the damage notifications in the combat log to see what weapon you were attacked with.

I guess my larger question is the people who did Eve Survival, how did they find out the damage type? there must be a way somehow? I'm interested in the mechanics.

Check out Grismars Priates@NPC's section for more info, it is the full database of npcs, searchable by various parameters. This information is provided by CCP perodically, usually shortly after major changes to the game. --------------------------------------------

If you're being shot by NPCs, the damage profiles of most NPC ships can be found on several different sites, taken directly from the CCP-provided data export. If you're being shot by player ships, it can be much more difficult to determine, and you have to employ a bit of guesswork on top of experience to get a decent enough idea.

It's generally a good idea to always have all fitted resist-boosting modules (whatever they might be) turned on as soon as possible after you undock or enter a new solar system, and keep them on until you run out of capacitor (also, ideally, you should never run out of capacitor just because of them). If you're facing mostly NPC enemies, you also want to match the type of hardeners with the type of damage they're dealing. _

Lists damage types by NPC-shipnames, if you are not familiar with factions yet. I still can't remember them all so I use the list still.
Fit hardeners for the 2 highest damage types, For example explosive and kinetic for Angels( Gist). And shoot with Explosive charges (if you have the choice).

Hybrids are those weird graphics that look like a mini beam that's quick. They're always Kin/Therm.
Lazers are always EM/Therm. You can tell which type (i.e. their optimal range) by the colour of the beam.
Missiles will tell you the type when they hit, or they appear in the log. For bonus points, you can click the missile on it's way to you and it will show the type on an overlay.
Projectiles are hard to figure out. In PVP most people use autocannons, which does actually make it easier. Small and medium AC's will have a muzzle flare that changes colour depending on the ammo type.
If you're doing PVP, get used to zooming in close to a ship and checking it out, you can work out what type of turrets they have fitted by looking - their type, size and tech level are easily discernible.
