I hate ranking them, each is best in its own way..
im gonna mention FLCL - very confusing 5-episode series. good drawing, excellent story. a bit demented so a lot of people are put off after two episodes.
Grave of the Fireflies is another masterpiece, created by Ghibli. It was so disturbing i decided not to buy the cd.
Genshiken is an excellent 'slice-of-life' story of japanese otakus
I don't even need to mention FMP: Fumoffu :)
as far as worst animes go, too many to keep count of

Ultimate Hentai Kamen manga pwns 'em all.
As for anime...i'd stick with Great Teacher Onizuka. Altho Hellsing is pretty good as well. And the legendary DragonBall (forget Z and GT. original stuff, that's what i'm talking about)

I love cowboy bebop. It reminds me of eve they use gates and everything.
Berserk is good as well. It's probably the darkest anime I've seen.

BTW I hate hardcore anime fans too, especially the ones that find excuses for watching everything from Naruto to DBZ to Hello Kitty, because "its anime." I am a scathing anime viewer, and absolutely love to hate it when it sucks.

Just because crappy low-budget anime that looks like it was drawn in someone's basement looks like junk, doesn't mean all does.

Best intro ever is this as linked earlier in the thread. Nothing beats CGI openings.

Just recently got back into the manga stuff.
Just recieved the GitS-Sac boxset today so much happiness.
Cowboy bebop movie - good film, really enjoyed it.
New Cgi appleseed, another good, enjoyable film.
Akira, its good but...the original comic/graphic novel(s) are better, heartily recommend ferreting these out.
Got some neon genesis...ok, but not the best ive seen.
Metropolis and Memories are worth a look.
