Another thing in that equation is probably the Micro Jump Drive and lately the Bastion module that made it possible to run most missions with almost no tank.
All the linked kill mails from ganks that I saw had one thing in common: no plate (yes, it were only armor ships for some reason).

It would almost lead one to believe that the loot dropped from the gank is only of secondary importance and that the financial advantage is being derived thorough market manipulation.... almost....
 To carve a successful niche for yourself in EVE you need to be able to out sell, out produce, out fight,-á out run, or out wit your competitors. That would be because the most common nullsec system type has 4 respawning hubs good for 2 - 3 people if and only if 2 freighter runs and 2 jump freighter runs are done for it, and multiple people farm it daily to keep the index up (and its not changing hands etc), and even the -best- nullsec system has only 20 good respawning anomolies in it (at most good for about 15 people).
Where as a level 4 agent hub will keep 120 players busy in system with hub value encounters +another 40 in each surrounding system (possibly higher if its a long pipe).
In any case, what on earth makes you think people don't go to any nullsec farming system to attack players. Intel channel is basically lit up 24x7 with reds entering the best truesec systems in Vale looking for kills, and there is no inclination amongst them to limit themselves to destroyers.

CCP does mention subscription stats, but they're usually pretty vague ("Around 500K subscribers"). The best information is activity from eve-offline, but that measures active players, not active subscriptions, and is susceptible to seasonal differences.

In 6 years of intermittent missioning from Auvergne and then Cat I lost 0.0 mission ships to PVP and was engaged 0.0 times by other players in PVP. After I adopted an undock insta, my boats were subsequently scanned 0.0 times by other players which meant 0.0 other players had knowledge of whether they were gank-worthy or not.
ie CCP doesn't intend for the game to be risk free, but you'll find the risk is clustered around the reward, and right now, sisters is rewarding indeed.

Imagine highsec as a walled city during the 30 Year War, relatively safe when compared to what lay outside those walls. Say what you want. People looking for more than a quick gratification don't want to feel like they are paying to babysit.
And yeah it's hard to equate griefing with real world vandalism for people who have always been too afraid to actually go outside and break something. Back in my day, we did just that. And we ran from the cops too. I guess with all the surveillance and new laws in place, the MMO is the only place left. CCP means "Crowd Control Productions" so of course the game has to be a collection point for people who would otherwise be vandals in a society that breeds lowlifes.
