Between clusters of galaxies there are strung out ribbons of clusters of stars that are thousands of light years long, the EvE cluster could be about 1% of one of those. But there's me thinking you know what you're talking about. Sorry.

As already stated, New Eden is not a galaxy.
Just also putting it out there that galaxies such as M33 do not appear to have sufficient central stellar velocity dispersions to contain central supermassive black holes. To assume that every galaxy has a supermassive black hole is simply wrong...

New Eden is about 120ly across at widest spot. Most galaxies are between 320ly and 3,200,000ly in diameter.
If we look at the Large Magellanic Cloud (close neighbour to Milky Way, lets pretend New Eden is in the LMC), I've marked the apparent size of New Eden on the map with a big red blob:

(It's the small dot at the center of the cloud, LMC is 14,000ly in diameter)
On the amount of stars: Larges galaxies have up to 100,000,000,000,000 stars.

Perhaps the area EVE inhabits is only part of a galaxy, such as the end of an arm, and there hasn't been much exploration? Or that we can only visit a certain number of systems, and the Black Hole is of no concern to the Empires

There is a landmark you can view on the star map somewhere in Minmatar space. It is a black hole of some size large enough to be notable. I forget the name, but it starts with a G and has a Minmatar-Nordic sounding name. I can find it when I'm able to get in game.
EDIT: Zaknussem beat me to it. It's called Ginnungagap.
