Because it provides more variety and surprises than pve/mining/trading/industry. I have some altchars doing this to finance pvp, and I must admit, I regard it as work, not as real fun.

Verbal battles, negotiations etc. The last thing on my mind when I get home is doing more PVP. I just want to relax and cruise the cosmos with a beer in hand. Chat with good people, train skills and make some isk. Occassional pvp is perfectly fine, just not my focus.
