Given how CCP tends to showcase certain ships in their website, I can imagine what they think are the best looking ships:
BS: Armaggedon
Cruisers: Vexor
Frigate: Merlin or Rifter

BS - none at all they all look silly and unworkable
Cruiser - Arbitrator only cruiser to look like it would work.
Frigate - Magnate (biased) but I do like the Tristan aswell
Hauler - what are these again :)
Shuttle - Amar coz it looks like a A-Wing

shuttle : ah toss-up between gallente (looks like a fighter/racing ship of some sort) and the Minmater (which looks like somehow they found an Tie-Fighter and an X-wing in a scrapyard and used bits of both :P)
Frigate : gah quite a lot of good uns :D I'd prolly put in most of the minnie ones :P maybe the condor and heron (caldari ships that don't look as much like a drunkard designed them from lego .. wow)
Cruiser : Vexor or thorax
Battleship : hmm mostly ugly I find, Dominix has a great texture, Megathron has a somewhat regal design to it I find (though crappy texture and the big hold in the center is mildly odd .. you wouldn't think it would have the most structure of all) arma looks ok and the tempest is interesting
Indy : Mammoth !

I'd also like to add that one of the real hooks for me to this game was that wallpaper with 3 executioners. The best looking frigate imo, shame it sucks.

The only ship in EVE that I find aesthetically appealing is the Merlin.
And that is purely due to the structure. The texture map makes me cringe (as do the textures of all Caldari ships.)

Battleship: Raven. The ship just looks menacing to me, I love the look to it, by far the best looking ship in the game.
Cruiser: Caracal. This ship looks awesome to me, by far my favorite cruiser.
Frigate: Punisher, I like the look of the Punisher, I'm not a huge fan of Amarr ships but Punisher does look rather neato.

The 'Golden Boy' Punisher class does it for me looks wise. Not a frig (ship?) in EVE which can show off so much attitude, and it looks mean!

My top fave ships
Frigate = Kestrel (looks sweet, my fave ship)
Cruiser = Arbitrator (looks like a submarine)
BS = between Raven and Apoc
Indy = Badger mk2 and mammoth (actually look like indys )
Other ships i love the look of, in no particular order = Rifter, Blackbird, Heron, Condor, Vigil, Breacher, Thorax, Vexor, Armageddon, Omen, Tristan, Atron, Maulus, Caracal, Probe and Tormentor. all sweet
Ships i hate to look at, in no particular order=
Moa (demented two legged Robotic space elephant ) <-- good ship tho
Bantam (reminds me of the mega maid from spaceballs)
Griffin (WTF is with the sideways thrusters on all the time?)
Rupture (WTF is that shape? )
Dominix (looks like a retarded space whale )
Celestis (looks like a overgrown Velator)
Bestower (to big and weird shape )
All other ships are ok looking

BS: Megathron. It looks sleek, stylish, and vicious.
Cruiser: Thorax. 'nuff said.
Frigate: Kestrel. The lines and shape of it are very nicely done.
Alternate Frigate: Executioner. Looks like a pod racer, flies like one too.
Honourable Mention: Tristan. That thing looks like it's going to transform :)

The celestis is the giant space banana, its a scary looking ship, I think the designer said some think like "dude this is good sh*t", just before designing the celestis
