Well when you start programming an engine to simulate a space environment it all comes out pretty much the same. A friend and I had started to code a game engine in 2000-2, and it pretty much looked like Eve. The model is quite basic as far as game programming goes. Grab some Nebula pictures from Hubble. Create a nice particle engine for thrust and realistic flares. It's not really that hard to get a decent looking space game. The issue is that it's all very unoriginal.
I wouldn't call Eve ground breaking. It's just like Tie Fighter and X-wing back in the day with some colorful nebula images in the distant background. You're pretty much in a box where a few models come on screen.
Space is a great way to have good graphics and also be immersive but stay within a small budget. There's little to no animation of the models, there's little to no environment creation, and it's easy to get something that looks decent from a technical standpoint.
Mechanics is what a game comes down to not looks, personally I don't like Eve's Combat Mechanics. When I play a Spaceship game I want something more simulation like, sort of like Battle for Midway, or something like Starfleet Academy. The Combat system to Eve is so limited and far detached from what you'd expect from space combat with Battleships. What about Ship damage, engineering, having a crew, Power Management (I wanna tell scotty to fix something). Things such as that, this whole f1-f8 and double clicking in space isn't all that interesting to be honest.

I like how you guys are like blah blah blah pvp blah, you know how many people play this game and don't even TOUCH pvp. :/ single shard is what puts EVE above them all.

Age of Conan will more than likely earn a sub from me if its even half as good as its being hyped up to be.. ST-online I might try out as I love the trek ship designs.. As far as the other mmos coming out well the people who will leave Eve for them are probably the same ones who already play multiple mmos so no big loss there..

in my case its no.
ww2 combat flight sims from 98 to 04 then eve online since med 05 so im kinda dedicatet to one game

I'd be delighted if Infinity makes it. However, after the SS2845 fiasco I'm not going to put any bets on any upcoming indie project w/o a prior full release from the design team.
Its simply too easy to get some nice screenshots, one or two working features in a rough alpha, and die quietly in the dark. Or go with a bang, pick your poison.

Uh? Why didn't anyone mention Darkfall Online?
Been following it since 2001. It's essentially EVE Online, but fantasy based with twitch combat. Plus, the game revolves alot more around the equivalent of EVE's 0.0, only the starter cities are under NPC control, the rest of the world is up for players to control.
Now, it's been a long time since Darkfall Online has been in development, but they restarted from scratch back in 2003, beta is looming soon, they've got a stable beta build, and are looking for publishers.
Personally, I don't see DFO as a threat to EVE, but rather as an enhancement, as it will bring more players to the idea of sandbox, open MMOs with a more popular genre. I can assure you all that Black Prophecy will never be a "threat" to EVE. Its being developed by Reakktor Media. Neocron anyone? This game will have more bugs than an ant-hill.

Am eagerly awaiting Infinity, just to see if even half of the things in development makes it into the final game.
Flavien's doing some really good stuff, whilst also holding down a full time job... not easy, and already he's done better than a lot out there.
Imagine how he might do if freed from the need of a job... say someone funding his creation... -

I doubt it. Unimpressive market controls, minimal-loss consensual PvP, and whenever any one side "wins" the entire map is reset. Doesn't sound that interesting to me. I don't think it'll take many people from EVE.
I agree with Tarminic's assessment concerning Pirates of the Burning Seas. Yet another level based "grind-a-thon".
I believe WoW will suffer a significant impact when this game is launched however.

A bit competion is only good. Hope they can bring some new fresh ideas that might inspire the development of EvE. However both those games will not see Beta in years to come. I have been waiting for Fallen Earth to go into beta and this spring it seemed to to do so early autumn this year. However at this point it will maybe go into beta 2008... 
As for Infinity I think think it will go live shortly after the release of "Duke nukem forever".

POTBS will not take people from EvE. I was excited about it - until I got into beta. I played for a while and quickly realized how lacking the game actually is.
The ship combat was fun - but anything else... blech.... The hand-to-hand combat was HORRIBLE. If you want to play POTBS without a monthly fee - pick up Sid Meier's Pirates... that was more fun.
Darkfall COULD be a fantastic game... but they have been promising beta for FAR TOO LONG now. My guild got signed up into their clan beta almost 2 years ago!!! Seriously - it was Dec. 2005. It's just ridiculous how long they have been pushing that back.
But yeah - Darkfall is really the only game that could be exciting IMO.
Age of Conan is a problem because it falls into the same template as every other fantasy type of MMO - it ultimately leads to a level cap and a dungeon crawl... think I'm wrong? Even the devs videos they have put out talk about the hours you will spend in dungeon crawls... The only true difference for this game is the combat system is partly controlled by the mouse - so it's not spam F1 repeat yada yada... AND - it's rated "M" - so yeah - there will be gore. :P How innovative. :P

How can some say that blackprophecy is so great?
So far we have a few dev-made screenshots, 3 vague paragraphs of features that they are planning, and some basic context storyline.
To even hope to compete with EvE it needs - Non-consensual and meaning full PVP with loss - One server for everyone, no shards - Free market - and much more
Simply being another space mmo if far from enought to compete with EvE.

Infinity looks like realization of a dream. First Encounters (Elite 3 (1995 game, your average CS:S player likely wasn't even born back then :P)) like galaxy, aka millions of real planetary systems, with Independence War like flight mechanics... If only game ever gets finished...

The only problem I can see with infinity will be the network programming. The systems are essentially procedurally generated, but how will it sync that data with tens of thousands of players and such?
EVE's largest competitor might be from CCP itself: World of Darkness. I will probably take a few months away from EVE just to play that, even if it sucks :P

What they need to watch is the fact Bioware just signed on with Lucas Arts. KOTOR online  If Eve is lucky it won't have a space game, but I wouldn't count on it. At least it's a good ways away.

Except you have forgotten a few things.
1. LucasArts hasn't made a halfway-decent game in a decade (KOTOR and Mercenaries don't count as they were really made by Bioware and Pandemic, respectively)
2. Bioware is now owned by EA. I expect to see crappy KOTOR clones and Mass Effect clones for the rest of their short and agonizing lifespan.

In terms of a Space-MMO while Eve-Online is not perfect I believe many of its mechanics are far more superior than any other mmo space themed or not. (Sure Eve has lots of room for improvement)
* Corp Hangar * Corp Mechanics * Standings (Friend or Foe identification) * PVP mechanics (oh please show me one pvp game that did it right 100%) * Skill mechanics * The games economy * The Eve-Online Community * CCP's communications with its player base * Social Events
I could go on forever....
Eve-Online is a result of countless years of work, I've seen it change and evolve since release. It still manages to have 30,000 concurrent connections, for a game thats over 4 years old thats very impressive.
Go ahead log into Lineage II, SWG, EQII, UO, or any other old P2P mmo, you will notice an extreme drop in population. LinII for example feels more or less like a ghost town.
I love the way CCP managed to maintain Eve-Online and keep it a very stable feature rich state.
Even with Black Prophecy and Infinity on the Horizon, they wont be able to compete with Eve. Not by a long shot. Especially not Black Prophecy, as another pilot pointed out they were the makers of NeoCron. The games trailers were hot, but the game itself was just... well the best way I can describe it is "Bleh".
However the launch of those games will probably introduce healthy competition, but Im sure the devs at CCP will have a good laugh once those games are released. Infinity sounds like a dream, but realistically speaking they wont be able to "all that" without both short and long term problems.
Since Eve-Online has such a stable foundation, it can probably out-evolve any games to be launched for the next 3 years. And in that time, CCP can always decide to use all the experience they have gained to rebuild eve from scratch. The result would most likely be redefining what it means to make a great MMO.
