Is there a way to track how much one person of a fleet mine op, mined while in fleet?

If you're asking about in-game mechanics, no, there is not.
However, you can set up certain practices in fleet to allow for easier bookkeeping if it's really important to you. For example, you could require everyone to use a separate jetcan and have your hauler keep a running total of how much each person has mined.

best way to be fair in mining op is to give evryone an equal share, including haulers and protection.
Base it on time spent in op/total op time

There are some definate reasons to do a corp op, and NOT have a straight split. If you are mixing a varied mix of miners, experienced, and noobish, a straight split will actually hurt the best miners, and they WOULD be better off mining solo. To counteract this, you can base the split on amount mined. (or a little simpler, their m¦/min * time in op) Here's how I used to do it when i ran mining ops. (I had a spreadsheet to help)
Track each miner's m¦/min and start and stop time. Track each hauler's m¦/trip, and numebr of trips.
Once the op is over, you decide on the total intake. Remove a corp tax amount Pay the protection a set percentage Pay the Haulers a set percentage (since one hauler can usually keep up with 5 miners, I used 20%) --- Each hauler gets a weighted payoff of that 20%. Pay the miners from the rest, weighted by mining amount.
This method will still benefit everyone, because it gives a reason for the good miners to mine, and still provides the good cover and haulage of a large op to the smaller miners.

a straight split is neither 'fair' nor 'equal' but simply plain lazy on the part of the mining op 'co-ordinator', whoever that may be at the time of the op.
Similar to Clansworth I've set up an excel spreadsheet which details the ship and mining equipment used by each player; it's a kind of a register which enable me to track when a player joins the mining op and leaves it. The register auto calcs the time spent mining or hauling by each player (provided I manually enter their start/depart times).
The register provides flexibility so that each player is able to mine for the time that suits them, starting and finishing according to their RL needs and schedule.
Each player makes a partial contribution (a percentage)to the total amount mined and so is paid a percentage of the total isk value mined. Because I've identified the notional Mining Rate of each player using the 'register', the register tallies each contribution and determines their percentage contribution hence their payment amount.

it makes it alot more fun to be not as serious about it. and it really does help boost the younger pilots. otherwise the younger pilots and pvpers who arent going to mine for exhumers would have no incentive to show up.
although an ingame mechanic would make it easier for those who want a percentaged split (say alliance groups or non corp members working together).

Roid kill mails are a bad idea just like rat kill mails are a bad idea. Server load. We don't want MORE lag and the sheer number of KM's generated under either scheme would be prohibitive.

Yeah, I don't want 'roid killmails either.
What I do know from my time CEO'ing, is that most members want their time to be their own. So give them that. Let what they mine solo, be for them only. Let what the rat go for them (with a low corp tax ofc). But on an op, whatever you get goes to the corp. So if you have a mining op, EVERYTHING goes for the corp. This makes it easier, on hauler (tell him to dump it into corp hanger), easier to refine (right click, refine all) and easier to mine (can pretty much AFK mine...no need to worry how much you mine, its all for the corp anyway.

An option is to let all miners buy a station container ( 1mill m3) at the destination station. They're cheap.
Name the containers, so the haulers can see who owns the container, and contract those containers to the hauler.
Let miners mine in their own can, and let haulers sort the logistics.
After the op, the haulers can contract the containers to the corp. Corp can see per miner what the yield was.
